Commercial Description:
Bottle Conditioned.
Ingredients: Pilsner malt (French barley from Champagne) & caramalt; German Hallertaur & American Galena hops. Yeast & sugar added to the bottled beer.
Chimay Rouge (Red) is noted for its coppery colour which makes it particularly attractive. Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. The taste perceived in the mouth is a balance confirming the fruity nuances noticed in the fragrance. Its taste, which imparts a silky sensation to the tongue, is made refreshing by a light touch of bitterness. To the palate, the taster perceives a pleasant astringency which complements the flavour qualities of this beer very harmoniously. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

Big offwhite head does not last. Deep dark red body with floaties. Deep dusty fruity wild berry aroma with bready cinnamon notes and traces of pepper. Sweet fruity cinnamon taste with yoghurty bready notes and wild berries. Mid- to thin-bodied. Slightly watery. Some astringency. Lots of carbonation in the mouth. Dry, long aftertaste of same. Very nice. (0.33l bottle, Systembolaget, Göteborg.)

Reddish brown with a quickly dissipating thin off-white head. Aroma of fruits, grains, nuts, Belgian yeast, sugar and toasted malt. Taste of fruit, sugar, sweet malts and banana with a semi dry finish. Decent Dubbel.

Although typically the least expensive of the red, white and blue Chimays, this is my favourite, perhaps since it was the first one I tried and the one I have the most experience with. Sweet, spicy, fruity and woody scent. The colour is my favourite type among beers - a very cloudy copper with a nice fluffy off-white head that settles to a nice thin layer with some lacing, but not that much. Taste is malty, a bit spicey-fruity with a bit of a bitter edge, but no noticeable alcohol. Ends with a bit of a long, but smooth bitterness. Manages to come off as light but not watery. Extremely drinkable.

Poured a nice golden color with a white head. Aroma is of nice candy sugar, spices, and some perfume. Flavor was much the same, sweet spiced and a bit sour.

Lives up to it’s colored name with a copperish hue. Softer in flavor than the Bleue it has no less complexity.

750ml. Pours a deep brown with reddish hue with a medium size beige head. Fruity aroma. Taste is very well balanced with caramel and yeast and malts. Very drinkable and pleasant. Never dissapoints.

From the tall 1 pt. 9.4 fl. oz. bottle marked L07-221. Pours a mahagony-ruby red tone with a puffy beige head that settles down after a moment. Sweet malts in the aroma and a little hint of fruitiness. Medium mouth feel. The taste was malted, slightly nutty, bitter, and with a hint of hops. A dryer finish. The alcohol is more prevalent in the flavor than in the aroma. I understand why it’s gets a decent rating. Not my style exactly but definitely a good brew.
