The flavors were very subtle to my unsophisticated palate but nothing stands out. Thin head after 15 minutes. Light coriander in the aroma, not much else. Very clean and... boring, actually. Flavor is controlled by the yeast, spice and hops. Its finish is lightly sour with yeast. Aroma is grass, citrus, sweet bread spices, coriander, lots of floral hops, a hint of bubble gum and pepper. Flavor is sweet cereal gran, yeasty bread, lemon poppyseed bread, wheat, straw, citrus, light fruity notes, a hint of earthy hearbal hops and some mineral notes. Finishes with herbal, citrus hops mineral notes a light bitterness and a little spice. Palate is medium bodied, pretty highly carbonated with a slightly creamy entry leading to a dry, somewhat chalky finish. Nose is slightly funky with notes of yeast, citrus, honey and spice. Good flavour that strikes a nice balance between sweet and spicy notes, with hints of honey, coriander, banana and clove. Quite highly carbonated which doesn’t spoil the mouthfeel at all and with a lingering sweetish spicy finish. Since I perfer donker or bruin Strong Belgium Ales, I was not too impressed with Chimay Blanche. The aroma is a bit citrusy or almost banana from the yeast selection, The taste is light and carbonated at first and the finish good from the bittering hops. The overall taste is not very full. I’ve never been all that good at issolating flavours and such but I can say that its pretty much everything you can expect from a good Trappist ale. It was spicy with a hint of sweetness but a bitter a finish. I appreciated though that the bitter finish (while enjoyable for a few moments) didn’t linger.
