Bottle was chilled, but a large, fluffy head still formed. One word I can use to describe this beer: smooth! Tastes like what Stone Vertical epic ’07 tried to taste like. Fruity/spiced aroma, complex taste of fruits, spice, and slight alcohol upon warming. Goes down very smoothly (too smoothly?). Probably my favorite of the three Chimay’s DrDavid (957), Johnson, Vermont, USA Aug 24, 2008 (Bottle). Fragrant fruit spice aroma. Hazy orange color with huge fluffy white head. First few sips show over-prominent alcohol, then the flavor settles down to a complex of fruits, hops, and yeast. Delicious. Taste is hoppy, dry, bitter and some alcohol, fairly average, reminds me a bit of Duvel, not in the same league as other trappist tripels. More hoppy and bitter than the bottle version. a hint of muscat. Taste was rather spicy with a bitter aftertaste. Nice smooth palate, overall not a bad option. The beer pours a hazy goldn yellow with a thick head and a great nose. i get orange and yeast and spice off the nose. the mouth feel is very lively with a great taste of orange yeast banana and spice.
