Sept, 2004: This seems to have more pepper than most. The ingredients list doesn’t inspire confidence in this being a quality product. Hop extract and wheat starch? Rougher and more interesting than <a href=Beer-Ratings.asp?BeerID=400&FanOfID=4383>H Grand Cru, though less attractive and pleasant to drink. [2.7]
Sept, 2007 A peppery, smooth and strong beer with a chalky, dry finish. Hmm. Must compare this with Duvel one day. Sugar notes. Pleasant enough - warm - almost hot - alcohol. Not unpleasant, but not outstanding either. [3.0]

Clear amber body looking to have a good deal of carbon dioxide. Aroma claimed to be with muscat and raisins, I could not tell, I just found it fruity. Pours a hazy golden amber brew with a thick fizzy off white head that slowly dissolves to a fine film. Very nice lacing. Aroma of straw, bread dough, some earthy must, yeast and a touch of citrus. Slightly hazy medium-golden pour with a short white head and some black sediment. Nose was strong with the Belgian yeast, lighter fruits (green grapes, raisins, pears), peppery spices, and some floral-type hoppage. Crisp and clean mouthfeel, and lightly astringent toward the back. Rather highly-carbonated, but ideal for flavor development here. Flavors followed the aroma well, with bright lighter fruits, some breadiness/mustiness from the yeast, pepper, oranges, and a wonderful floral/herbal hop presence. Poured hazy orange-gold with an average foamy-creamy white head, plenty of bubbles and tiny floaties. Aroma of spices, banana and other fruits, slightly sour candy malt, alcohol - very ashy and bitter as it warms up. Taste is bitter yeast, some fruit and malt behind, bitter spices, alcohol. There’s a long, shifting bitter finish to this one, the body is average, it’s quite lively, but I have to admit it’s my least favourite of the Chimays but it’s a solid tripel/strong blond. Aroma; Alcohol is proudly standing in the front line , shy salt and pepper is hiding before well known Belgian yeast , Baltic sea ice .
Taste: Der Kommandant reported that proud alcohol become more refined blended nicely with team of Chimay .Blended nicely, gut for long sipping trip. For Trappist long enough for those lonely nights, monk and Chimay...

Some malt sweetness and fruitiness. Good balance. Mouthfeel is full. Finish is crisp and clean. Aftertaste is slightly bitter. Beer is 8% alcohol by volume, no alcohol bite.
