Even though they are all perfect beers I believe the Chimay taste ladder begins with Red on top followed by Blue and then White. This one has more character and complexity than the sweet and straightforward Rouge and is better balanced than the rather over the top Blue. It is leaner cleaner and more interstingly complex than either and has a fabulous refreshing mouthful of hops! This is the first beer I have rated here. I’ve given it the maximum rating in every department because over many years of trying and comparing hundreds of beers, this is my absolute favourite and has been so for a long time...Duvel is similar in some ways and is second in my personal ratings, but does not have the almost miraculous WOW factor of the white-cap Chimay. Chimay White pours a beautiful head, with a nice cloudy burnt golden color. The beer has a complex aroma and with subtle hints of banana. A leaner Belgian triple, if one could be called such a thing. Nice balance of bitterness and wonderful use of yeast, As a matter of fact, it really demonstrates why yeast is such a important ingredient in brewing. Cheers to the monks!!!
