Commercial Description:
Chimay Blanche (White), with its typical golden colour, its slightly hazy appearance and its fine head is especially characterised by its aroma which results from an agreeable combination of fresh hops and yeast. The beer's flavour, as sensed in the mouth, comes from the smell of hops: above all it is the fruity notes of muscat and raisins that give this beer a particularly attractive aroma. The aroma complements the touch of bitterness. There is no acidity, but an after-bitterness which melts in the mouth. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

On tap, my first Chimay from tap. What a nice beer, I can’t really complain at all about this beer. It was pretty damn close to perfect for a tripel. Aroma: floral hops with yeast and citrus fruits. Palate was rich and filled the mouth. Alcohol: Was there any alcohol in this beer what a good balance. Finished dry and balanced with no one flavor of the brew dominating too much. The only complaint is that I finished it too fast. I will have to rate a bottle later.

My favorite Chimay to date. Not sure why I haven’t rated this before, but here it goes. The aroma is full of nice complexities like honey, apples, yeast, sweet malt and graham crackers. Medium carbonation with a huge, frothy seafoamy white head with some nice Belgian lacing. Flavors are yeast, light fruits, marshmallows, caramel, and spices. Very nice beer and perhaps Chimay’s best.

Though not to everyone’s taste, the discernible bitterness adds to the character of this particular tripel. The best looking of the Chimay beers, with a durably brillliant whiite head, and reassuring sediment clouding the last of the pour, Cinq Cents is a great beer.

Chimay Blanche pours a very cloudy golden color with a magnificent white head. The head does not lace and thins out after a couple drinks. To the nose the yeast is immediately present. As well as some spiciness and fruit, possibly grape or lemon. Your nose does not lie there is some bitterness, but overall Blanche is a very smooth and tasty brew.

As Chimay Blanche:
Appearance: Golden, nice amount of head - not longlasting. Last bit a bit cloudy. Aroma: Bit of fruit. Citrusy. Taste: Hopsy, bit of fruit. Bitterish. Info: 330ml bottle, 21/3-2006, 93/300

As Chimay Cinq Cents:
Appearance: Hazy golden. Good amount of off-white head. Sediments and floaty bits. Aroma: Fruit and citrus. Wood. Fresh. Taste: Hops and citrus. Nice aftertaste. Info: 750ml bottle, 10/6-2008, 194/500

Slightly cloudy and dark golden pour with a huge white head that eventually recedes. Spicey and fruity aroma, slightly sweet. Flavor is yeasty with a slightly mustiness on the front end. Middle reveals some banana, clove, apple and dried fruit. Finishes dry with lingering yeast. Pretty solid!
