COMMERCIAL DESCRIPTION
Chimay Tripel, with its typical golden colour, its slightly hazy appearance and its fine head is especially characterised by its aroma which results from an agreeable combination of fresh hops and yeast. The beer’s flavour, as sensed in the mouth, comes from the smell of hops: above all it is the fruity notes of muscat and raisins that give this beer a particularly attractive aroma. The aroma complements the touch of bitterness. There is no acidity, but an after-bitterness which melts in the mouth. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.
Ingredients: Water, malted barley, wheat starch, sugar, hop extract and yeast. See Protz (beer-pages.com/protz/features/chimay.htm) and John White (www.whitebeertravels.co.uk/chimay.html)

Orange color with bhite/orange creamy head. Aroma had malt and hints of citrus. And dominanting feeling of hops. Beer is more bitter than I expected.

Pours a rich, dark, copper/golden color. Medium carbonation - tiny particles floating around. Generous, lasting, foamy head. Hoppy, caramel, bread, chocolate(-ish) aroma. Nice, full body. Nice, slightly bitter taste and aftertaste.

Aroma is light cookie dough and a hint of spice, maybe a poke of pumpkin pie and the spice form of cinnamon. The aroma is most pungent immediately after the pour, but give it a swirl to kick it up again. Appearance is just like apple cider. It would be the foam only that let you differentiate the two. There is a fair amount of particulate suspended in the brew, examine it against a back light to appreciate. Taste is sweet malt, and really tastes just like it smells but with more pumpkin pie. Seems like average carbonation and medium viscosity. Not too thick, not too thin. For a brew of this sweetness, it is not very syrup-like. Overall, not bad. I tried it with Indian palak gosh, the sweetness didn’t stand up to the spice, but the brew itself was appreciable.

Draft many times. Pours a dark honey amber with a pillowy head. Very well blended fruity tripel. Apple. Banana. Lemon. Nectarine. Sweet in general but finishes fairly dry. Medium syrupy body. Some spicy bitter notes for balance, but tripelwise a full fruity wonder. Pretty much the standard for Belgium tripels and with good reason. Perfection for its spot in the beer world. Usually a bit heavier on draft but that is not a bad thing. Very much the yardstick to comparing any other tripel.

330ml bottle. Hazy orangey golden colour with average to huge firm creamy lacing white head. Fantastic fruity, yeasty and slightly spicy aroma, banana, pineapple, a grassy note. Taste is less intense and varied, balanced sweet- and tartness, increasing dry finish. Full body, well carbonated. Very good.

UPDATED: MAY 28, 2012 Pours to an impressive white head and nice light, golden color at the bottom of the glass. Smell is yeast, nutmeg, and citrus, in that order of pungency. Flavor is light initially, yeast and nutmeg, then more of a hops-kick (yet not overly bitter), and more of the same. Super crisp. Perhaps not quite as complex as their Grande Réserve or Première, but still outstanding. After-flavors are banana clove and bread.

A wonderful blend of spicy and sweet Tripel taste and complex flavour without any aspect dominance.
