COMMERCIAL DESCRIPTION
Chimay Tripel, with its typical golden colour, its slightly hazy appearance and its fine head is especially characterised by its aroma which results from an agreeable combination of fresh hops and yeast. The beer’s flavour, as sensed in the mouth, comes from the smell of hops: above all it is the fruity notes of muscat and raisins that give this beer a particularly attractive aroma. The aroma complements the touch of bitterness. There is no acidity, but an after-bitterness which melts in the mouth. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.
Ingredients: Water, malted barley, wheat starch, sugar, hop extract and yeast. See Protz (beer-pages.com/protz/features/chimay.htm) and John White (www.whitebeertravels.co.uk/chimay.html)

Pours a slightly cloudy orange with a fluffy white head. Funky slightly banana aroma. Slight raisin aroma with some alcohol notes. Taste has some tang to it with an effervescent carbonation. Medium mouthfeel.

Aroma improves as this beer opens up. I smell perfume a bit of alcohol cheese light caramel and light fruit. Beer is a foggy burnt yellow. Appearance: Foam lingers, although it was chilled it easily generated a two inch head in my wine glass. Foam lingers around for 15 min and settles to the edges of the glass with a thin island of foam in the center of the glass that remains throughout your drinking experience. Taste: This triple is bitter and dry. Light fruit is present but I wouldn’t describe this beer as sweet. There is a definite basement mustiness that works well with sence of a honey comb that could also be described as soap. vAs a note the fruitness really comes out on the palette when/if you burp. cheese, mild fungi, basement and Palate: Thin and dry. Alcohol is warming to the palate and beyond. When I think of triples I tend to lean towards a stronger fruit profile along with the funk this beer is able to present to us. That being said this is a lovely beer that is perfect when I am looking for something dry and bitter. A pleasant change to my usual preferences.

10oz goblet at The Abbey DC. Pours a clear orange with a lot of thick, filmy white head. Nose of perfume, sugar, lemon, mild soap, yeast, honey comb. Flavor is nice, sweet, sugary, honey, mild spice, a little white pepper, soap, yeast, brie rind. Full finish, creamy. Classic.
