COMMERCIAL DESCRIPTION
Chimay Tripel, with its typical golden colour, its slightly hazy appearance and its fine head is especially characterised by its aroma which results from an agreeable combination of fresh hops and yeast. The beer’s flavour, as sensed in the mouth, comes from the smell of hops: above all it is the fruity notes of muscat and raisins that give this beer a particularly attractive aroma. The aroma complements the touch of bitterness. There is no acidity, but an after-bitterness which melts in the mouth. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.
Ingredients: Water, malted barley, wheat starch, sugar, hop extract and yeast. See Protz (beer-pages.com/protz/features/chimay.htm) and John White (www.whitebeertravels.co.uk/chimay.html)

Color is golden to amber, very cloudy. Head is generous and persistent till the end. Medium carbonation. Full and creamy body. Aroma is floral, yeast and dark fruits. Taste is caramel, dried plums, cloves (and other spices), bread and some bitterness. Aftertaste is sweet and very long. Up to now the best Chimay I’ve tasted.

Draught@Het Trappistenhuis, Gent 02/2015. Creamy elderflower blossom pour. Soft pillows of gentle, floral yeastiness gain contour by perching on rich, bready & honeycoated malts and allying themselves with dry, green herbal hoppiness into a mature Northern Hemisphere earthy milkshake. I do not recall enjoying this beer as much from the bottle as from tap now - the missing link between Saison Dupont, Tripel Karmeliet, an imperial Witbier and organic buttermilk.

Yeast, spices (ginger, muscot, pepper), and a buttery floral scent creates a fine "Belgic" aroma. Well-balanced taste, containing yeast, spices and hints of banana. Fresh, easy to drink.

Cloudy yellow appearance with a huge white head. Aroma is floral, yeast, a faint notion of dark fruit. Taste is yeasty-sweet at first, then becomes very bitter. Still, the alcohol is quite well hidden. Medium, smooth body. It’s good, not more and not less.

Part of the tasting set I got for Christmas and so served in the matching Chimay glass. The White is by far the most beautiful looking beer in the set with a sweet fruity plums, raisins, figs with a touch of spices aroma. The thick head of foam leaves incredible belgian lace coating the glass and lingers for ages in a thick film over the beers clear coppery gold body - stunning. Full bodied with a very active carbonation and some boozy heat plus warming in the pit of my stomach. Surprising from an 8% beer but it makes sense when you consider a lot of the alcohol is coming from belgian candy sugar which also gives it an incredibly dry finish. The taste is sweet, malty, sugar & earthy spicy fruits. Out of the three this may be my favorite.

33cl bottle from S&R. My very first rating. Just starting to develop my palate. Sweet, yeasty, bread.

W aromacie brzoskwiniowe, trawowe, ziemiste, lekko alkoholowe, Piana bardzo obfita, grubopęcherzykowa w swej strukturze, mocno nagazowana. Barwa złota, lekkie zmętnienie. W smaku wysoka słodowość miesza się z nuta alkoholową, rozgrzewającą przełyk. Wszystko dobrze zbalansowane w miarę, chociaż alkoholowa goryczka mogłaby być łagodniejsza. Ogólnie po leżakowaniu pewnie zyska sporo.

On tap at Brauhaus, Athens Greece. Light orange color, hazy, white head. Aroma is malty and caramely. Taste is sweet, with malts, caramel, some herbs and flowers. The aftertaste is nice and long. Medium body with medium carbonation.

Bottle 33 cl. at home. A positive surprise and a very nice Tripel though not as multi-facetted as the best (read: Karmeliet). Beautiful colour, fine champagne bubbles and head and nice fruity aroma and taste. Less "yeasty" than some Belgian classics, which suited this beer very well. Drank it at cellar temperature during winter but it would probably be better a little colder as it is very drinkable and carries its high alcohol content very well.

0,33 liter bottle. Pours a golden / orange coloured beer. Taste starts sweet and then turns yeasty, bittery.
