COMMERCIAL DESCRIPTION
Chimay Tripel, with its typical golden colour, its slightly hazy appearance and its fine head is especially characterised by its aroma which results from an agreeable combination of fresh hops and yeast. The beer’s flavour, as sensed in the mouth, comes from the smell of hops: above all it is the fruity notes of muscat and raisins that give this beer a particularly attractive aroma. The aroma complements the touch of bitterness. There is no acidity, but an after-bitterness which melts in the mouth. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.
Ingredients: Water, malted barley, wheat starch, sugar, hop extract and yeast. See Protz (beer-pages.com/protz/features/chimay.htm) and John White (www.whitebeertravels.co.uk/chimay.html)

Pours hazy amber brown with a huge frothy head. Aroma is light, bananas, malty sweetness and fruity notes. Flavor of spices, yeast, hint of bananas, some noticable hop bitterness over the malty sweetness. Bitter finish. Palate is full bodied, high carbonation and rough but really enjoyable mouthfeel

Golden colour with a thick foamy head. The aroma has some citrus notes, yeast and sweet fruits. Aroma is mostly bitter, some banana and apricot. The bitterness stays long time in the mouth. Full-bodied. Completely enjoyable, but I personally would prefer the red to this.

I do not wax on poetically about beer but I do know the quality of a beer once tasted. This review is not about my tastes but reinforces the numbers, which are arbitrary.

Bottle at home. Hazy golden color, small white head. Lively carbonation. Aroma of grape and fruits, some notes of malts and yeast. Some alcohol as well but it well hidden. Full bodied. Nice medium sourness, light to medium sweetness and medium bitterness. Really good.
