Chimay Tripel, with its typical golden colour, its slightly hazy appearance and its fine head is especially characterised by its aroma which results from an agreeable combination of fresh hops and yeast. The beer’s flavour, as sensed in the mouth, comes from the smell of hops: above all it is the fruity notes of muscat and raisins that give this beer a particularly attractive aroma. The aroma complements the touch of bitterness. There is no acidity, but an after-bitterness which melts in the mouth. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

Bottle from Total Wine in Boca Raton, FL. Snifter. Yellow gold pour with serious haze and some sediment. Thick white fluffy head. Some decent lacing. Aroma of cereal, fruit, raisins, flowers. The taste is initially bread and cereal with an aftertaste of fruit and raisins. The mouth is creamy and carbonated and it does have a fairly bitter, dry finish. So SO good.

C’est une excellente trapiste. Pour une blonde qui vient de l’école belge, elle est bien équilibrée sans avoir ce goût de sucre, parfois un peu écoeurant qu’on rencontre dans certaines classique. Elle va bien avec un poulpe à la gallega, opinion personnelle, bien entendu.

This is how a good triple should taste like! Colour appearance smell palate, I can’t say enough about it. Excellent body with lingering aftertaste.

Bottle in a Samoens restaurant. Pours hazy amber with a good white head. Nice rich flavour of spice, banana, aniseed, hay and caramel. Tasty stuff.

330ml bottle from Masuyo’s. Poured into a snifter. Aromas of citrus, biscuit, clove, yeast and apricot. Bitter on the palate. Medium body with nice carbonation. Slightly dry on the palate. Fruit and yeast flavors become more pronounced as it warms up. Little bit of arugula and white pepper in there too. Nice long peppery bitter finish.
