COMMERCIAL DESCRIPTION
Chimay Tripel, with its typical golden colour, its slightly hazy appearance and its fine head is especially characterised by its aroma which results from an agreeable combination of fresh hops and yeast. The beer’s flavour, as sensed in the mouth, comes from the smell of hops: above all it is the fruity notes of muscat and raisins that give this beer a particularly attractive aroma. The aroma complements the touch of bitterness. There is no acidity, but an after-bitterness which melts in the mouth. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.
Ingredients: Water, malted barley, wheat starch, sugar, hop extract and yeast. See Protz (beer-pages.com/protz/features/chimay.htm) and John White (www.whitebeertravels.co.uk/chimay.html)

An orange beer with a beutiful head. It has the aroma of orange and fruit and the tastes of the same. It is very well balanced between the sweetness and the bitter lingering. A great beer that I enjoy on a regular basis.

UPDATED: JAN 8, 2006 (Bottle 33 cl) Amber coloured, frothy head, lots of sediment. A dry, very dry almost medicinal or herbal beer, and as such an unusual trappist. Comes in the neighborhood of Orval but far from that beers complexity. A bit too bitter for my liking. 180893

33 cL bottle. Pours hazy orange with a huge huge off-white creamy head. Lovely spiced yeasty and caramel malty aroma. Soft caramel flavoured with a small spice note breaking through in the beginning. Goes into a more yeast and spice dominated flavour. Ends slight bitter and spiced. This is by far my favourite chimay and one of the best belgians of all.

UPDATED: DEC 30, 2008 Bottled. Hazy orange colour, huge foamy off-white head. Aroma is caramel, some wood, earth and mildly spicy. Flavour is yeast, hops, some wheat and also some alcohol. Alcohol isn’t burning bad though.

Pale amber, hazy rich head. Banana aroma. Lively and complex. Very flavourful and fruity. Peppery. This is an old favourite I have not sampled for far too long.

UPDATED: OCT 20, 2009 Bottle. Very fruity, slightly yeasty aroma. Golden colour, slightly hazy. Semi-stable, white head. Peppery flavour, slightly sweet with a good hoppiness, dry and grassy. The aftertaste does not seem as dry as other Chimays, but quite bitter.

Cloudy light amber color; small sized creamy head. Malty aroma. Strong body, round; good malt flavor, a bit biscuity, somehow yeasty and spicy too; very good flavor, but the bitterness is a bit too much.

2008-04-04, draught at Ris Ras, Århus, 7-4-8-4-16=39
Just hazy golden color, creamy head. Soft aroma of malt, and light biscuits, maybe a bit perfumy. It has a good malt flavor, dry, with a good body strength, with a very good Belgian yeast job. Well bitter. Very good.

2003-01-14, bottle, vintage 1997, 5ys old, 8-5-8-4-16=41
Beautiful amber color, thick head.
Very nice aroma, more delicate than Chimay Red; caramel and old hops.
Good body structure and good balance; it has aged well, just some oak cask flavor, and a light liquorice hint.
Final stronger and more interesting than Chimay Red.
