Chimay Tripel, with its typical golden colour, its slightly hazy appearance and its fine head is especially characterised by its aroma which results from an agreeable combination of fresh hops and yeast. The beer’s flavour, as sensed in the mouth, comes from the smell of hops: above all it is the fruity notes of muscat and raisins that give this beer a particularly attractive aroma. The aroma complements the touch of bitterness. There is no acidity, but an after-bitterness which melts in the mouth. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

Wow! Yum. Everything in this beer seems so well balanced. Pours a beautiful golden colour and has a great belgian yeast aroma that’s slightly sweet. Head doesn’t quit and lacing is excellent. Carbonation was just right and he mouth feel is nice and silky. Taste was really balanced between the malt, hops and yeast. An awesome beer!

Colore ambrato, con tendenze all’arancione lucente. Schiuma bianca alta tre dita, fine e persistente. L’odore è splendido, di iva e pesche, di frutta insomma come vuole lo stile. Il corpo scarno rende la birra troppo liquorosa ma comunque buona e godibile, secca dopo la dolcezza iniziale.

Single small bottle from Julio’s. Poured into a snifter. A deep cloudy honey color with a frothy off-white head that settles to a thick lace. Aroma of spice, bread and fruit. Body is on the heavy side with more bitterness than fruit. Lingering dry bitterness on the back side. Could this be the original "Belgian IPA"? Enjoyable overall.

Transfer from BA review on 7-27-13- Poured from bottle into a chalice glass Appearance – The beer pours a cloudy yellow-orange amber color with a one finger white head of a more fizzy nature. The head has a lighter level of retention, fading over about a one minute time frame, to leave a light level of lace on the sides of the glass. Smell – The aroma is of a bready and biscuit nature mixed with a moderately strong yeasty and orange citrus smell. The yeast with it bring some nice spice aromas of coriander and clove mixing with some banana smells as well. Taste – The taste begins with a lighter bready flavor mixed with a moderate amount of orange citrus flavor. As the taste moves on the orange dries out some with lots of yeast and spice of clove and coriander coming to the tongue. As the orange gets lighter it is replaced by a light banana taste as well as some grassy and herbal hop flavors. Overall the taste gets rather dry at the end and when combining with a bit of an alcohol flavor it leaves a dry and yeasty bread taste to linger on the tongue. Mouthfeel – The body of the beer is on the medium to slightly thinner side for a brew of 8 % abv with a carbonation level that is on the higher side with tons of prickly carbonation bubbles. The feel is very nice for the style with the slightly thinner body making it very drinkable and light in composure and with the prickly carbonation level accentuating the spice and hop taste all in all making for a more exciting drier champagne like feel which match the tastes well. Overall – A classic triple for a reason. It is dry and yet exciting brew with a drier, moderately yeasty, lightly hopped and nicely spiced flavor.

330ml bottle. Hazy golden orange with a foamy white head. Flavors are pineapple, apricot, orange, grapefruit peel, dough, wheat, honey and pepper with grassy notes. Medium body, lively carbonation, smooth texture.

This is my least favorite Chimay....which means it is better than over 90% of beers anyone will ever have. Pours a hazy straw color with a head that never seems to truly go away. There is always more than a lacing. It is a sweet beer with malt, but there is a slight presence of hops, and a feeling on the tongue that I can only describe as peppery. Unsure if that is the carbonation in it that makes that tongue tip tingle slightly or not. I have had this a few times, and usually when I get a Trappist beer, this is not the one I choose (Grande Reserve usually gets grabbed first), but I am glad I did grab this one along with some cheeses I bought. Paired nicely and it reminded me that this still is a stellar beer. ***rerate due to me accidentally clicking the wrong overall ranking****
