Chimay Tripel, with its typical golden colour, its slightly hazy appearance and its fine head is especially characterised by its aroma which results from an agreeable combination of fresh hops and yeast. The beer’s flavour, as sensed in the mouth, comes from the smell of hops: above all it is the fruity notes of muscat and raisins that give this beer a particularly attractive aroma. The aroma complements the touch of bitterness. There is no acidity, but an after-bitterness which melts in the mouth. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.
Ingredients: Water, malted barley, wheat starch, sugar, hop extract and yeast. See Protz (beer-pages.com/protz/features/chimay.htm) and John White (www.whitebeertravels.co.uk/chimay.html)

2005 33cl bottle. Excellent tripel. Aroma of pepper, tabacco, phenol, clove and orange. The aroma draws almost directly into the flavor with more prenouced phenol, clove and pepper, with just a hint of orange and tobacco followed by a mellow bitterness. The sprite carbonation plays great with the aroma, flavor and dryness of the beer. An well crafted beer!

Pours with a huge thick white head. This softens the taste nicely and adds a little creamy touch. Belgian yeast and spices do most of the magic. The malty side is also soft, but certainly notable. Mild hoppiness in the middle. Then yeast and spices turn it upside down once more. A hint of alcohol only in the begining, later it fades away. Enjoyable glassful.

UPDATED: JUL 27, 2016 Lätt grumlig med fint vitt skum. Doftar lite jäst, bröd och hö. Smaken bred med humle och lite sötma. Eftersmaken lång och fint besk. OBS!

Camomilla aromas in smell. Belgian way hopps and palate. Quite sweet. Slippery and oily. Pure trappist quality.

Bottle. Color: Gold, littlebit hazy. Dense off white frothy head. Lively carbonation. Taste: Bitterweet, yeast, subtle hints of herbs, fruit, flowers and tobacco. Complex and tasteful. Dry mouthfeel. Finishing with a slightly more bitterness. Overall a really nice beer.

Stubby little 33cl bottle to Chimay goblet. L11 date code, which makes this 2011 vintage, I think. Can’t believe that I haven’t entered a rate for this yet! Pours light brown with a lingering off white head. Aroma is raisin, molasses, clove. Flavor is banana, raisin, molasses, clove. Clove bitterness in the finish.
