COMMERCIAL DESCRIPTION
Chimay Tripel, with its typical golden colour, its slightly hazy appearance and its fine head is especially characterised by its aroma which results from an agreeable combination of fresh hops and yeast. The beer’s flavour, as sensed in the mouth, comes from the smell of hops: above all it is the fruity notes of muscat and raisins that give this beer a particularly attractive aroma. The aroma complements the touch of bitterness. There is no acidity, but an after-bitterness which melts in the mouth. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.
Ingredients: Water, malted barley, wheat starch, sugar, hop extract and yeast. See Protz (beer-pages.com/protz/features/chimay.htm) and John White (www.whitebeertravels.co.uk/chimay.html)

UPDATED: JUN 8, 2010 One of the most balance blondes. My favorite beer when eating sushi. A thick, lively beer with plenty of flavor. Updated: What makes this beer so special is the complexity and the balance of all that is going on in this fine brew. You have the nice delicate sweetness and carbonation that you get with you Belgian strings but a nice balancing hit of hops. I do have to knock this beer down to a 4.9 however because I can only give one 5 rating and until I’ve rated many more beers, I am not ready to annoint this a 5. But it’s darn near perfect to me.

Sometimes the hype is well deserved, as is the case with this brew. Not too much of the flavors that are usual for this style, but just enough to make it a classic. When will other brewers stop bludgeoning their customers over the head with flavors and just let the natural processes develop on their own? Beautiful head.

33cl bottle into a chalice. Pours a hazy amber with a huge white head which persists, leaving good lacing. Nose is Belgian yeast and malt. Taste is malt and candi sugar, with a smooth finish with a kiss of hop. Delicious.

Golden pour. Subtle subtle leafy/raisin aroma. Amazing leafy sweet bitterness that leaves a pronounced wonderful finish!

IMO better than the reserve. And I loved the reserve. This beer is just about perfect. Dark copper color, full-bodied, and fruity.

Bottle: Cloudy ´dirty´ orange amber with a white lace that clings to the glass. Orange, banana sweet aroma; taste is very complex taste with notes of pepper, wheat, coriander, orange all in a very well bitter sweet balance.

CHIMAY the greatst Abbay beer, for me. Pours a cloudy gold with a large foamy white head. Aromas of malt and wheat with a yeasty nose, some hop. Flavor is yeasty, a bit malty and wheaty. Palate is warm and a tad dry.

A little beerish somewhat chewy malt kind of smell with pine and pine bark aromas. Hazy knid of darkish apricot color with funneling action and some sediment suspension. Sweet chewy pale malt, maybe same (Wheat) grain, taste with a hint of broth and grapefruit. Medium bodied, smooth resinous feel, crisp and soft carbonation, with a dry finish. Very drinkable, I know the Blue is popular, this might be my favorite of the bunch.
