Chimay Tripel, with its typical golden colour, its slightly hazy appearance and its fine head is especially characterised by its aroma which results from an agreeable combination of fresh hops and yeast. The beer’s flavour, as sensed in the mouth, comes from the smell of hops: above all it is the fruity notes of muscat and raisins that give this beer a particularly attractive aroma. The aroma complements the touch of bitterness. There is no acidity, but an after-bitterness which melts in the mouth. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.
Ingredients: Water, malted barley, wheat starch, sugar, hop extract and yeast. See Protz (beer-pages.com/protz/features/chimay.htm) and John White (www.whitebeertravels.co.uk/chimay.html)

Bottle. Pours with a frothy big head, clearly wheat induced. The appearance is hazy golden to light amber. Attractive. Aroma is very discrete, vague notes of fruit and spices. The taste is quite full and soft in the mouth, spicy bitterness dominates with a long dry aftertaste. Overall, it is full tasting beer, typically dry and bitter, but without strong identity. The Chimay blanche was tasted along with La Trappe Tripel and Westmalle Tripel: It was the most pretty beer to look at and equalled La Trappe in taste. The aroma on the other hand scored lowest. Narrow win over La Trappe.

One of my favourite Trappist beers. I don’t know why but I love this beer very much. Bottle both 33cl and 75cl. Pours a white thick head equals to 2-3 fingers and it is very persistent. Smell: Very fruity and spicy. Muscat grape, citrus, herbal hop notes. Taste: In addition to the flavours I noted in the smell, I detected hints of honey. Lemon and orange notes are also available. Good finish with sweet and herbal notes.

330ml bottle dated best before end of 2017 and poured into a Chimay goblet. It poured a hazy copper colour with a two finger cream head that has good retention leaving a thick curtain lacing. There were initial aromas of apple, pear and bready malts followed by sweet banana and honey. Surprisingly strong alcohol taste, but also sweet candied sugar, banana, bread malts and some light apple and pear flavours. It was medium bodied with medium carbonation and a creamy feel. I’m a big fan of Chimay, but this was not one of the better tripel beers. Ultimately I thought that it was too boozy and everything just kind of got lost behind that.
