Chimay Tripel, with its typical golden colour, its slightly hazy appearance and its fine head is especially characterised by its aroma which results from an agreeable combination of fresh hops and yeast. The beer’s flavour, as sensed in the mouth, comes from the smell of hops: above all it is the fruity notes of muscat and raisins that give this beer a particularly attractive aroma. The aroma complements the touch of bitterness. There is no acidity, but an after-bitterness which melts in the mouth. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

UPDATED: AUG 9, 2011 Bottle. The pour was a cloudy amber-brown with a large (2-3 fingers) off white foamy head that had great retention and produced some really good lacing that lasted throughout. The aroma had a gentle scent of bread malts, a very mild resin hops and a nice dose of a leathery yeast with a hints of raisins, caramel, banana and a touch of vanilla. It had a bitter-sweet taste with a hint of dried fruit and vanilla at first and finished with a slight emphasis on the hops yet remaining quite malty with notes of banana and some spice at the end. The flavor was left to linger for an average amount of time leaving a nice warming sensation behind. Mouthfeel was medium to full in body with a very creamy yet dry texture with a mild carbonation. Overall an absolutely tasty Trappist Ale that lets the fruit and malts blend together ever so perfectly. It is as I would call it, “a very nice relaxing sipper".

Easier to drink than the red and blue. Unfortunatly I can find only the 75ml bottle which is a little too much for me at once. I tried what was remaining the day after, and even if aroma and taste were still not bad, the beer had almost lost all the fizziness as expected.

0.33 bottle. Cloudy, amber color and a medium, white head. Complex aroma: flowers, honey, citruses, spices, resin, delicate coriander, and unfortunate skunky notes. Taste is obviously sweet, again honey and flowers though the other flavors are less perceptible. Medium body, slick texture, and above average carbonation. Finish is not as complex as the aroma, one might even call it simplistic in comparison; introduces a delicate bitterness. Overall quite a good beer, yet it pales in comparison to its Red and Blue brothers.

Golden sparkling hazy body and a thick rocky white head. Nice fresh and sweet aroma of apricot, spruce, honey, cereal. The taste is heavy sweet and medium bitter with a long bitter finish. Sticky and creamy texture.

Dourada e turva com boa formação de espuma densa de longa duração. No aroma notas frutadas e cítricas, nuances de abacaxi são percebidos, assim como especiarias e o malte. O sabor é bem condimentado e levemente apimentado, as demais notas surgem na sequencia. Corpo médio, final longo e bem carbonatada. No retrogosto é possível perceber algumas especiarias e um agradável amargor. Um clássico, cheers!!!

A wonderful tripel. Grapes immediately. So light like a cloud at times. Perfect balance of crisp yeast and hop bitterness as well as delicate fruit (apricot or grapes) undertones. Very dry finish. Terrific. Why did it take me so long to drink this? On tap at a Belgian beer festival in Budapest.

Gylden brun klar med lavt hvitt skum. Lukter frukt, belgisk gjær og lett karamell. Smaker karamell, lett anis, noe bitterhet. Kjenner også alkoholen. Fyldig søt avslutning.

Diabobale (273) - Vallata, SUD ITALIA, ITALY - MAY 9, 2015
Dal colore dorati-arancio quasi ambrato, leggermente velato, con riflessi dorati, si presenta con una bella schiuma bianca abbondante, molto fine, quasi cremosa, con lunghissima persistenza. Al naso è una goduria: note molte floreali (fiori bianchi) e leggermente speziate sono conferite dai nobili lieviti trappisti. Al palato arriva abbastanza carbonata ma con un corpo sopra la media. Al gusto invece ritroviamo le note floreali e speziate, seguite da un’ottima luppolatura, quasi sorprendente. Il sorso è molto rotondo, per nulla secco, con un amaro finale dai connotati molto profumati ed erbacei, per una buona persistenza.
