Chimay Tripel, with its typical golden colour, its slightly hazy appearance and its fine head is especially characterised by its aroma which results from an agreeable combination of fresh hops and yeast. The beer’s flavour, as sensed in the mouth, comes from the smell of hops: above all it is the fruity notes of muscat and raisins that give this beer a particularly attractive aroma. The aroma complements the touch of bitterness. There is no acidity, but an after-bitterness which melts in the mouth. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.
Ingredients: Water, malted barley, wheat starch, sugar, hop extract and yeast. See Protz (beer-pages.com/protz/features/chimay.htm) and John White (www.whitebeertravels.co.uk/chimay.html)

UPDATED: AUG 9, 2011 Bottle. The pour was a cloudy amber-brown with a large (2-3 fingers) off white foamy head that had great retention and produced some really good lacing that lasted throughout. The aroma had a gentle scent of bread malts, a very mild resin hops and a nice dose of a leathery yeast with a hints of raisins, caramel, banana and a touch of vanilla. It had a bitter-sweet taste with a hint of dried fruit and vanilla at first and finished with a slight emphasis on the hops yet remaining quite malty with notes of banana and some spice at the end. The flavor was left to linger for an average amount of time leaving a nice warming sensation behind. Mouthfeel was medium to full in body with a very creamy yet dry texture with a mild carbonation. Overall an absolutely tasty Trappist Ale that lets the fruit and malts blend together ever so perfectly. It is as I would call it, “a very nice relaxing sipper".

Brilliant and a great example of the type. Smooth, complex, estery, fruity, warming, apricot. One of history’s great beers.

Light and fruity aroma of yeast. The flavor is fermented, musty, sour and incredibly bitter. Not so good bitterness that fills the upper part of the mouth for a long time. This is the grass that I will pour out. Kung av öl @ Facebook for more pictures and ratings.

Fruity smell. A touch of banana. Herbal and dry. Hoppy finish. Lots of yeast fruitiness. Not much spice, but a touch of vanilla. Didn’t really get good notes, since I was at a party.

33cl bottle. Pours orangey brown with a small long lasting off-white head. Aroma: yeast, fruity hops, malt, citrus, banana, grapefruit. Taste: wheat/yeast, citrus fruit, banana, grapefruit, some herbs/spices, bit of a hop bitterness in the finish and aftertaste. Smooth mouthfeel, full-bodied. Another great beer from Chimay, much fruitier than I thought it would be.
