Thanks to tastybeer for sharing this very interesting take on a saison over Thanksgiving weekend. I have had a Choc beer or two before in the past but when combined with Prairie the result is amazing. This experiment should be repeated every year.
Aroma / Appearance - A warm base keeps a yellowish gold hue with a ring of fresh white head. Starch, dry yeast, hay, honey, and the bite of brett stand out in a very refreshing nose.
Flavor / Palate - Liquid dryer sheets freshen up the palate. Yeast and hops transition to an earthy finish like freshly harvested bales of hay. Everything hangs around for a while as an added bonus. It is hard to find fault with this except that one bottle was not enough.

Bottle. Hazy gold, white head. Some retention/good lace. Aroma of dust, fruity ester, grass. Taste is lightly bitter, grassy, dusty, light citrus. Palate is dry, soft, light bitter finish.

Pours yellow with nice big head, aroma is light spice and citrus. Taste is crisp and a touch of spice, very quenching

pours hazy light yellow with a nice white cap, good retention and lacing. leathery bretts, white wine, dust, citrus, lemons, rustic malts and other cereals, bit of dirt, grass and herbs. lively yet soft carbonation, light body - oily, bone-dry bretty and herbal-grassy finish - superb mouthfeel. very rustic, dry and refreshing offering. excellent!

Superbe arôme de brett, zest, épices, fromage et céréales étoffées. Son corps parfait la rend extrêmement facile à boire, elle a une certaine robustesse en début de bouche mais s’amincie rapidement vers une douce sécheresse. L’équilibre malts/brett/finale est impressionnant et surtout surprenant...Je devrais maintenant plus me surprendre de PAA.

Bottle (750 ml). Shared by marheb, thanks! Hazy yellow with a small/medium white head and light lacing. Aroma is really enticing (with the Prairies Artisan Ale signature) with brettanomyces, floral notes, fruits, yeast, lemon and a touch of malt sweetness. Taste is also of brettanomyces along a good malt backbone, floral notes, fruits and yeast. Medium body. Good carbonation. Slightly dry finish. Alcohol is well hidden. Very pleasant surprise. I think this one might be underrated. Very good spelt Saison (even though the "spelt" component isn’t really shining. Refreshing and drinkable. Prairie Artisan Ales is one of my favorite brewery this year.

Bottle; Pour is fairly clear, light golden - with a two finger fine bubbled white head into this glass ; retention is average / above average with some light spotting present. This was sampled after ’Merica, and Puncheon. The nose has a more predominant brett character out of the gate. Florals, sweetbread, mild lemon zest, with some grass present - the nose is nice. The flavor profile is dusty basement initial, moving to a medium mouth feel, lemon, peach, grass, sweet breads, with a very slight grassy / floral hop bitterness near the finish - it’s a little lacking,like puncheon, I suppose, but its a nice drinker, either way,

Bottle: The aroma consists of citrus, brett, and lemon/lime. It pours a hazy dull golden-orange with a large with head that quickly fades to a thin film outlined by a thick ring. The flavor starts with citrus, fruit, and yeast. The finish is moderately floral with some light lemon peel. It’s light bodied with lively carbonation.

UPDATED: NOV 3, 2013 Bottle: hazy & muddled straw-yellow with a foamy & soapy white head that lasts for a while as a nice little layer. Aroma is tart & sharp apple skins, light lacto & acidity, with a bit of Brett on the back-end with some wet hay, funk notes. Taste is dry & funky with lots of Brett, wet hay, some tart lemon skins, & a good bit of wet cotton & funky cheesecloth.
