Thanks 4balance for this beer. It’s been on my radar for some time now. Poured from bomber to pokal:
Pours a nice ruby red / pear gold body with a noisy finger of off white head that dissipates almost instantly. Steady, slow beading.
The nose is certainly Belgian - sour bread, figs, red grapes, some funky yeast, raisins, there’s a touch of soft wood if you really hunt for it.
On the tongue, it’s a bit more agreeable than many true Belgian dubbels. There’s a certain level of balance that you might not be familiar with.
I wish the mouthfeel was a bit thicker. One of my favorite aspects of the quad/dubbel genre is that velvety consistency. Apart from that though, this beer is well executed.

Bomber poured into a tulip glass. Pours a red amber with a large tan head that quickly melts away. Nose is candied fruit, caramel, sugary goodness, with a bit of earthiness. Taste is much of the same but is contrasted nicely with a slight bitterness. Very well balanced and unlike any Belgian dubbels I’ve tried. Nicely done! I’ll certainly be drinking this one again!

Taste is chocolate, caramel, brown sugar and a hint of booze. Very drinkable, although not what I was expecting in a Belgian style dubbel.

Pours cloudy brown with off white head. Aroma is sugary sweet grain. The taste is big brown Belgian with a lot of sweetness and earthy molasses and a touch of booze. Not amazing but this is definitely the best brew I have found out of Oklahoma.

22oz bottle 12/21/11 (Jack’s Mountain Home)-51° in Trappist Glass-Pours a dark ruby red with a small off white head. Aroma of yeast , caramel, malt, and earthy notes. Taste of yeast, malt, sweetness, bready, and slight alcohol. This full bodied brew is not too shabby. I was expecting worse.

split the 500ml bottle amongst friends. Poured a cloudy brown color with a small white head. Aroma is sweet malts, light fruit notes. Flavor is about the same - fruity notes, sweet malts. Enjoyed.

Bottled@SBWF2011. Hazy amber colour, small head. Aroma is sweet malts, some earth, mild fruityness as well as some slight wooden notes. Flavour is rather hoppy with sweet malts and some wooden notes. Semidry palate. Balanced, but a bit sweet. Would do for a sipping session beer though.

Pours mahogany brown with small tan fizz. Smells bready and yeasty, nothing out of the ordinary. Tastes fruity and bready, par for the course. Full-bodied with a smooth texture and decent mouth-carbonation, Choc Signature Dubbel finishes with a bready feel and taste.
