COMMERCIAL DESCRIPTION
Here at Choc Beer Co., we take great pride in producing top-quality, innovative beers. With that in mind, we are very excited to announce the rebirth of Gratzer! Gratzer is a traditional Polish style of beer that has been commercially extinct since the early 1990s. Our Gratzer will take its place in our Signature Series as an annual release. The beer will be available in 750 ml corked-and-caged bottles with a very limited amount on draft. Traditionally the style was brewed with 100 percent oak-smoked wheat malt and a Polish yeast. The unavailability of these ingredients have created major obstacles for any commercial brewer interested in bringing back Gratzer. Undeterred by these challenges we decided to recreate this style. After considering smoking wheat malt in Krebs, we were able to convince Weyermann, our malt supplier, to smoke the malt. Once the malt was secured our attention turned to sourcing yeast. We could have used a readily available yeast strain, but we wanted to recreate a historically accurate Gratzer. With that in mind, a member of our team traveled to Poland to secure the proper yeast. The resulting combination of wheat and oak smoke is very unique. It is a beer that every serious enthusiast should experience when Signature Gratzer hits stores in Oklahoma and western Arkansas in late January. As always with the annual Signature releases, there is a limited quantity. Once the beer is gone there will be no more until next year!

Pours a light golden straw color. Big fluffy white head with good retention. Aroma is smoke, wheat and a light fruitiness. Flavor has similar notes, but the smoke is definitely front and center, almost giving it a smoked ham flavor. More balanced than many smoke beers, but the smoke is still the focal point. Medium bodied. I can appreciate what’s going on here, particularly everything that went into recreating this rare style. But it’s just not something I would seek out to drink again.

Bottled at SBWF. Lightly hazy golden, small head. Fruity and dusty smoke aroma. Dry with light body and clean crystal malt character. Light smoke as perfume atop a modern crystal malt body. Low bitterness. Superficial.

Bottled@SBWF2012. Yellowish golden colour, aroma is spices, mild smoked notes as well as some slight herbal and toffeeish notes. Flavour is very similar with some fruityness as well. Pleasant!

Bottle at Stockholm Beer and Whiskey Festival 2012. Hazy yellow liquid with small white head. Aroma of smoke, wheat, sausage, clove and knäckebröd. Taste is dry and light bitter with notes of sausage and some floral hops. Medium bodied with light carbonation. Interesting, but weird, stuff.

2011 Bottle. Into a snifter. Cloudy dark straw color with two fingers of head. Smells like smoked salmon. A lighter smoke than other smoked beers. There’s a bit of fruit, maybe banana in the smell too. Smoke taste too. Soft wheat texture and taste. Low bitterness. Moderate carbonation, the bubbles dance in the mouth. I enjoy that fact that this is a revived beer from history. But I do not personally enjoy it enough to want more.

Poured into a snifter. Big thanks to Urbancaver for this. Brewed in 2011. 3.0 A: Murky brownish yellow color. Three fingers of foamy white head. Retention is below average and just a few whisps of lacing are left. 5.0 S: Wonderful nose! Powerful smoked malt with layers and layers of depth. Campfire smokiness is in the forefront, but underneath there is porcine galore and beyond that are BBQ briquettes. The rest of the smell is pretty simple as you can’t get past the smoke and to it. Still, this is absolutely perfect. Big and powerful and as complex as you can get (given the big and powerful) and yet it’s so well integrated and rounded. 3.5 T: The taste can’t hold up to the nose. The smoke flavor is there, but it’s not nearly as deep or complex as in the nose. Only the campfire variety manifests. You can, however, get to the base now though. Light pear fruitiness, dirty earthiness, and poplar wood. Chard and chard-like bitterness. A bit grainy and wheaty as well. 3.5 M: Medium body. A little more carbonation than I care for, but not bad. 750ml bottle at the Flying Saucer in Little Rock, AR. Pours a lightly hazed golden-yellow colored body with a finger-width, dense and frothy, white head that dissipates slowly and leaves a nice lacing. Aroma is grainy pale malts with some wheat, a moderate smokiness, some plastic phenols, a touch of bread, and a light wood. Flavor is similar. Grainy pale malts with a light wheat, some dry smoke, a light wood, and a touch of peat up front. Light breadiness in the middle with some yeast spice before this finishes dry and woody with a moderate bitterness as well as a hint of phenol and a light grainy wheat. Fairly lengthy aftertaste following a medium body and a crisp, refreshing, moderate carbonation. Overall, an interesting beer. I’m dumb to the style, but it seems like a well made example of a style without a lot of flair. Grainy malts with no sweetness and some wheat, dry wood, and some smoke. Nothing special, but not bad.
