Head is initially large, frothy, white, fully diminishing. Body is dark yellow, dense medium sized particles, bottle conditioned. Aroma is moderately hoppy (flowers, citrus - lemon), moderately yeasty (dough), moderately malty (cookie), with strong spicy elements such as coriander, clove, and ginger, plus some banana character. Flavor is moderately sweet, moderately bitter, lightly acidic. Finish is lightly sweet, lightly acidic, lightly bitter. Medium body, dry and watery texture, lively carbonation, lightly alcoholic. Good stuff: bright and complex aroma (somewhat wit-like, but maltier), very good flavor balance (until you get to the end of the bottle, when the yeast starts to take over). A little less yeast in the bottle would help considerably. As it warms, the yeast comes out more strongly, so this is better at cooler temps (mid/upper 40s F).

Very effluescent with yeast predominating a light aroma of citrus and some grassy components. Very soft hues -- the opposite of the lower pH, effervescent bright Belgians I enjoy.

Tan colour, yeasty, herbal, peachy-malt aromas and flavours, and its lively, refreshing body. I’d call this one a saison.
