COMMERCIAL DESCRIPTION Belgian IPA. Many people are familiar with the pale ale variety called India Pale Ale a.k.a. IPA. This style was originally brewed by the 19th century British brewers for export to their troops stationed in India. Since it had to survive the 6 month trip in the hold of a ship, it contained more alcohol and a lot more hops than a typical Pale Ale. Hops and alcohol helped to prevent spoilage that might have ruined a batch of this precious brew. The aces high is a Belgian IPA which is an emerging style created by hop heavy American brewers. It has a slight bitterness and citrus in the flavor and aroma. Also, we used our Belgian yeast strain instead of our traditional ale yeast. We chose to use 3 varieties of hops with almost 2 lbs of hops per barrel of beer. The color is golden with a cloudy haze from the yeast since this beer is unfiltered. The aroma is noticeably hoppy and citrusy from the Chinook hops we used to dry hop. You will also pick up a complexity from fruit- like esters and spice notes. It has a medium body with some sweetness. The name has double meaning. It’s named after sorachi ace hops which are quickly becoming one of my favorites. As well it’s named for a song by IRON MAIDEN my favorite group, UP THE IRONS!!! Details: Grains Used: Pils Malt, Abbey Malt, CaraBelge, and Caramel malt Hops Used: Palisades, Sorachi Ace, and Chinook Hop Bitterness: 60 IBU’s ABV: 6.5%
