COMMERCIAL DESCRIPTION
Your next specialty beer is from the group of farmhouse ales called saisons, produced in the French-speaking region of Belgium called Wallonia. French for “season”, saisons were traditionally produced for the late summer harvest season as a refreshing source of potable water for the farm workers. My recipe is a straightforward pilsner malt base with just a little wheat malt to showcase the flavor esters produced by the yeast. You will notice it is fairly cloudy, there is still yeast in this unfiltered beer and it lends a dry dustiness to the palate. The flavor and aroma consists of fruitiness, such as pear and apricot, some floral notes, as well as some mild peppery spiciness. Sanctuary Saison is a dry beer with little residual sweetness, so expect this one to be easy to drink and refreshing on these hot summer days.

On tap at the brewery. Light wheaty pils malt sweetness. Aromatic with honey, yeasty notes, a bit of lemon too. Pale hazy straw color with thin white head. Medium to light body with low carbonation. Starts medium dry with light wheaty-yeasty tang. Light herbal and spicy notes with little bitterness. Well balanced and mild with semi-sweet finish and smooth yeasty bitter after. Could use a bit more carbonation, but a nice saison

Sampled on draft at the brewpub this beer poured a pale golden color iwth a large foamy white head that lingered and left great lacing. The aroma was sweetish table sugar, candied golden fruits and lots of bread. The flavor was very sweet and tangy with a strong bready presence and moderate notes of candied golden fruits, table sugar and a hint of pepper. The finish was long and tangy with lingering table sugar and golden fruits. Moderately full bodied. Not really a typical saison in my book but quite tasty.

On tap at the brewpub. Pours a hazy golden orange with a thin white head. Aroma of tangy citrus, clove, bready malt. Flavor also features lots of sweet but tangy orange, orange rind, and sweet bready malt. Fruity and tasty! 7/4/7/4/15 (3.7/5)

This poured a cloudy darker golden color with a white head. Aroma was of light spices, and some fruit rinds, yeasty notes and light dusty hops too. Flavor was just a tad on the sweet side for the style, but still fairly dry and inviting, spices are there but not everpowering and taste natural from the yeast, not added. I didn’t pick up some of the fruit notes that I like in my favorite saisons, but still overall a very solid beer. Thanks Lithy!
