COMMERCIAL DESCRIPTION
So what to do you with surplus Christmas beer from 2011? Well we decided to take our Zwarte Piet and put it in oak barrels and add lactobacillus and brettanomyces and age in our cellar for nearly a year. The result is a spiced sour ale with wood and earthy characteristics similar to a Flemish red ale (Rodenbach). The bitterness of the beer and the spicing used to balance the sweet caramel malt degrades with age, but the acidity from the bacteria increases causing a whole different kind of balance.

This poured a dark red to light brown color with a beige head. Aroma was of light plums, orange juice soaked leather, and light wood. Flavor was similar, fairly lactic, yet fruity, and the light spice notes of the holiday beer or slightly there too. An interesting experiment to say the least.

Had this at the RB Pittsburgh December 2012 Post Apocalyptic Beer Tasting. Very nice looking darker pour. Aroma is simply fantastic, make my mouth water. Now keep in mind, I like sour beers and this did not dissapoint. Taste is oh so nice. Lovely and easy tart feelings tingle all over. This may be the best CBW beer I can remeber. Right up there with the best old country sour ales. Same with the finsh, I should have drank more of this growler. I’m pissed beerman Dan got to take it home, jealously got the better of me. No way is this above 7%! THIS BEER ROCKS!
