COMMERCIAL DESCRIPTION So what to do you with surplus Christmas beer from 2011? Well we decided to take our Zwarte Piet and put it in oak barrels and add lactobacillus and brettanomyces and age in our cellar for nearly a year. The result is a spiced sour ale with wood and earthy characteristics similar to a Flemish red ale (Rodenbach). The bitterness of the beer and the spicing used to balance the sweet caramel malt degrades with age, but the acidity from the bacteria increases causing a whole different kind of balance.
