Commercial Description:
The next specialty brew we will be offering is the Woolslayer Alt. This is a German-style ale that originated in the Dusseldorf region of Germany. An Alt is an ale that is fermented at the low end of the temperature range for ale yeasts. The normal temperature range for ale yeasts is 60 – 70 F. Woolslayer Alt was fermented at 62 F. This cooler fermentation will reduce the production of esters and also slow down the yeast, resulting in a slower than normal fermentation. Upon completion of fermentation alt beers are lagered for a minimum of two weeks, ours was lagered for five weeks. The cool fermentation and cold lagering give this German ale some lager characteristics. Woolslayer Alt will have a deep red, coppery-brown color with a medium body. There will be a pronounced hop bitterness and an array of malt flavors. The aroma should be malty with no fruity-esters, and little to no hop aroma. The finish should be crisp and clean-reminiscent of a lager. As for the name Woolslayer St. is the street that ran through what is now the Church Brew Works parking lot. The word “alt” means “old” in German. There are records of brewing in Dusseldorf as early as 873; these were probably the first Alt beers. I hope everyone enjoys and appreciates this unique brew.

On Tap, Church Brew Works. Poured dark brown with a ruby hue. Thick, frothy, creamy, off-white head. Aroma was not strong, but yeasty. Flavor was bready. Sweet caramel hints, and hints of fruit in the end. Thin bodied. Sticky mouthfeel, with a lingering crisp sweetness the aftertaste.

On tap, at brewpub 3/10/07. Pours a clear cola brown color with a small film of white head. Decent retention. Light nutty and roasted malt aroma, with light hints of cocoa. Flavor is lightly fruity with some nutty malt, light coffee, a little cocoa, and some roast. Finishes slightly sweet. Mouthfeel is soft with moderate fine carbonation, slightly grainy on the finish. A pretty decent Alt, though it could be a little creamier with less nuttiness.

On tap at Church Brew Works, brown-amber color, with an off-white head, with a toasted malt nose, a faint floral hop, caramel note, with some raw cereals in the aroma follows through on a medium-bodied palate with a toasted malt character, nice flowery hop accent, with a mild biscuity malt note, subtle fruitiness, leading towards a leafy hop bitterness finish.

On tap at the Church. Clear caramel, off-white head. Aroma is coffee, caramel, molasses. Flavor is coffee, slight wheat. Drops off severely.
