A Sim rate (plastic barrel at the Bree): Aroma of sweet, tasty apple, but the flavour is a different story. Tart, full of that great lambic-like sourness that ciders so rarely have. First sip is a dry white wine that hits the palate then follows through with a fruity sweetness. Finish is dry, then sharp, then lambic. It’s got it all. Really really enjoyed this.
