Flavor is very sweet with a bit of a strange aftertaste. Like a way to overripe red delicious or something. The nose is fresh and fruity (apples) . Perfect on a base of fois gras de Gascogne. The flavour is like smooth dessert-wines like a good suternes and you sense the oak. Poured a clear golden color with a fizzy white head that faded to a ring. Aroma of green apples and a nice brandy-like presence. Tart apple with a nice oak presence and a light brandy booziness make up the flavor. Moderate to high carbonation. Pretty nice. JB175 (1274), Holland, Pennsylvania, USA Mar 4, 2008 Bottle from New Beer - 04 harvest/05 maturation. Light golden color with a fizzy head. Nice funky-sour apple aroma that is reminiscent of a good gueuze. Flavor has a nice subtly sour apple taste with some bretty-like funkiness. Good use of wood here as well - really nice mouthfeel as well. A nice mix of slightly sweet and tart apples. A really nice cider. nhorween (488), New York, New York, USA Mar 4, 2008 750ml, 2007. Cloudy straw colored pout with a soapy head that leaves immediately. Great funky, yeasty, appley smell - the oak and calvados are in there too, and it works really well (even though I’m not a huge fan of calvados in general). Super refreshing - pithy sourness with enough sweetness to balance. Musty and spicy qualities in the finish. Really smooth and it’s amazing how much clean apple flavor there is in the finish. This would be the perfect cider to go with a holiday meal or to break up a tasting of big barley wines or imperial stouts. Really enjoyable.
