Lightly hazy goldend orange...Apple suace nose with light spice and pureness. Flat with a sweetness that is balanced by a nice acitdity. Appley, with pear and some mineral notes with a nice tartness to round it out. Nice but not as amazing as I was hoping for.

Bottle. So this is the best the cider world has to offer, say you? Let’s find out. :-) The elegant bottle gives off a light yellow hazy body with almost no head but lively carbonation. Aroma is strong sulfates up front, wood, near-salty tones and merely hints of apples. Strange. Taste is light acidic tones, wood, apple cores and hints of herbs. Balanced, and with a soft carbonation with carries the semi-dryness of this cider well. Pretty drinkable, but I lack the apple-ness both in nose and mouth. A nice cider. Sure. Number 1? Not in my book.

750ml bottle. 2009 vintage. 7.5%ABV. Golden pour with lots of sediment and no lasting head. Fantastic nose full of fresh apple and oak with a funky edge. Even more complex on the palate with a sweetish finish that lasts without being cloying and turns tart. There’s even a smoky note in there. I’m no cider expert but I would imagine this is almost as good as it gets.

0.75l corked bottle. A fantastic looking bottle this and already before popping the cork, I’m almost in love with this cider just based on the looks of the bottle... Anyhow, the pour is making this fantastic fizzing sound. Really great sound - almost so great that the sound alone enough reason to buy a new bottle, but the white cider-head quickly fades into a thin and small islandy head. At first the aroma is quite sharp; a nice clear woody and farmy tone with a mix of yellow and green apples and lots of green apple zest! Also some mild tones of both sweetness and alcohol. Really nice. It’s as expected lively big-bubbly carbonated and it feels surprisingly medium-bodied. Lots of both acidic and sweet apples with tones of fresh farm. The flavors changes come what character when you get more than half way down the bottle. It’ gets more both acidic, sweet and concentrated. It ends with a small subtle alcohol tone and almost herbal finish. Beautiful cider. 20.02.2012

MISSILE CORK WARNING - MISSILE CORK WARNING - MISSILE CORK WARNING
Keep your eyes away from this bottle, that cork hit my ceiling with a rare violence
In short: A pleasant cider with an old wood barrel and farmhouse character. Nice.
How: Bottle 750ml, corked & caged. Apples harvested in 2008, bottled in 2009 6.9% abv. Consumed when between 1 and 2 year of age
The look: Cloudy yellow blonde body topped by a tiny white ring of foam
In long: The abv was 6.9% and not 5.5% as currently listed on ratebeer, and I don’t understand why there is currently a separate entry for the 2006 vintage because it is 7.5%, both entries should probably be merged. NOW ON TO THE CIDER: The nose on this thing is honestly one of the most crazy thing I have ever smelled. This is like walking in an old dank cellar with a lot of old moist barrels. Fantastic nose really. Taste is a bit of a letdown compared to the complexity of the nose. concentrate apple juice, honeyed bread, brandy, tart green apples, a LOT of wood barrels, barnyard notes, some mead, moderately sweet, lots of small tickling bubbles and something a little cheesy in the yeastiness. A little alcohol bite despite the low abv. I liked this cider, but to be honest I am not very familiar with farmhouse ciders so I may be easily impressionable. Everybody is ignorant, just on different subjects.

75 cl bottle. Almost clear, yellow/green grape liquid with small, fast dissipating white head. Aroma of apples, calvados, oak, vanilla and red apple skin. Taste is light to medium sweet, light tart and appley. Light to medium bodied with high carbonation. Overall, very well balanced and refreshing. Not too sweet, not too dry.

2009/10 bottle, 7.5% ABV. 11C. Hazy yellow gold, white mousse vanishes immediately. Aroma of sweet apples, lemon, acidic pineapple, mild floral honey. Quite fizzy. Sweet with an obvious calvados syrupy note. Slightly chewy with some stewed apple, dries out very nicely with some acidity too, but less than suggested in the nose. Some spices - cinnamon, vanilla - and alcohol at the end. Wood creeps in after a while. Seemed overcarbonated and too sweet at first, but pineapple and wood grew to check the sweetness although the lemon disappears completely. Good, complex cider that doesn’t quite live up to its aroma.

UPDATED: NOV 4, 2011 750mL 2010 ed 6.9% at Paradiso Dupont. Pours a still, deep jewel gold with no head/fizz. No legs. Nose is odd phenols, mild plastic. Similar nose to the Cuvee Colette. Taste is definitely sugary, the first of the ciders tonight to actually have some sort of apple character though this one accents sugar and honey more so than "apple." Very small amounts of calvados spice and warming alcohol. I like the palate on this though...thicker and honey like for cider. Interesting....I think I’ll stick with the Dupont Bio/Organic. 10/26/2011 4/3/7/4/12=3.0

750mL 2010 6.9% at home. Big carbonation on the pour. Very spritzy. Unassuming SRM- pretty typical. Fizzy white head diminishing quickly. Nose is still small phenols and plastic and eggy suphur, moving to rich apples like apple strudel. Baked cinnamon apple character is muted but there. Taste is a nice playoff of sugar, tart apples and very moderate sugary booze. Good stuff but still, the Bio normal version is better especially for the money. 11/4/2011 6/4/7/4/13=3.4

Bottle @ home. 08 apples, 09 barrels. This fucker shot off like champagne- I’m surprised the cork didn’t lodge in the ceiling with the force that it hit the ceiling with. Hazy, golden appearance with a small bubbly head. Sweet, apple pulpy, slightly vinous aroma. Slight dry, slightly spicy, lightly oaky, a bit funky, red apple pulpy flavor with the pulpy taste lingering.

750ml bottle, apples from 2008 & matured in 2009. Clear pale golden yellow with a big fizzy white head that quickly fades to nothing. Aroma of ripe red apples, horse blanket, oak and brandy. Flavor is apple liqueur, honey and a lightly funky yeast and oak character. Light body with very active carbonation and a semi-dry, crisp mouth feel. This is an excellent cider, you can tell it was fermented out fairly dry and the Calvados brought back a mild sweet liqueur, the funky barnyard character is nice as well.
