COMMERCIAL DESCRIPTION
Gentle but strong cider with 10.5% alcohol, fermented during the long winter months. Nurtured as a white wine, by pressing, natural fermentation and aging of a variety of apples, this cider presents a slightly blond robe. Its floral odor is generous and confirms its delicacy and complexity in the mouth. May be served with white meat, fish, seafood or dessert. To be served cold, between 4 and 6 C.

Darker golden, clear, still. Direct white wine nose, straightforward apples, not very complex. Very dry palate, powdery finish, once again kinda waxy alcohol presence and aftertaste. Light bodied, still, rather dull.

A light yellow cider with no head. The aroma is sweet with strong notes of apples. The flavor is very dry and acidic with notes of apples as well as hints of wood. It is so acidic, that it is close to be sour.

Sample at the ciderhouse, RBSG Sunday cider tour. A bit oilier and darker than the lower-grav previous samples, but still fairly light...vinegary, vinous nose packs some oomph but isn’t really wonderful....body quite alcoholic, dry, harsh and rather medicinal.

Extremely dry and lightly tart with alcohol very apparent. Pale, still, wine-like appearance. No legs or viscosity. Looks thin and feels a bit thin in the mouth also. Over-attenuated and too simple. Sampled at the orchard at RBSG’05.

Pours a still, pale, light champagne color. Nice sweet apple bouquet has a hint of tartness. Mouthfeel is very dry, puckering, and has a lightly warming, alcoholic finish with some subtle complexity. Perhaps this could use some aging to mellow it out some though.

(Sampling) 2005 Cidres & Crepes in the Eastern Townships. A watery-straw colour. Nose is too mild. Sour, tart, tonic and vinegar. Lacking all flavour. Really bad.

Gentle apple sweetness and a light tart bite in the back...Flat body allows the alcohol to show up, as dry white wine flavors appear...Most of their ciders taste diluted, but this is the most obvious example imho...
