COMMERCIAL DESCRIPTION
Élaboré à partir de pommes McIntosh. La qualité des bulles vient de notre respect de la méthode traditionnelle (semblable à la méthode champenoise). Le cidre léger mousseux vieillit donc naturellement sur lie pendant plusieurs mois, créant du même coup de superbes bulles.

Developed from McIntosh. The quality of the bubbles is our respect for the traditional method (similar to the method champenoise). The sparkling cider aging naturally on the lees for several months, thereby creating beautiful bubbles.

Bottle, corked and caged, shared at game night (for celiac gamer Kim!). Very pale, faded lemon yellow with fine, brisk carbonation that livens the pour. Dry apple and champagne yeast, slightly musty and slightly doughy, finishing bone-dry. Tickly fine carbo. A great pleasure!

Bottle sampled at Mondial des Cidres de Glace 2014 with Linh, Minh and Angela. Pours a clear golden body with light bubbles. Aroma is apple, light yeast, dry spice and sweet sugar. Mouthfeel is medium and dry with notes of apple wine, champagne, spice and honey. Very nice sparking cider - but I preferred Domaine Pinnacle’s take on this variation.

750ml corked bottle. pours almost cloudy very pale yellow-grey-ish with a frothy aerial and collapsing white head, column-like ascending bubbles. much alike champagne if not a cloudier aspect. although it is made entirely with mcintosh apples, granny smith esters are present along with lightly tart citric and lactic notes, yeast-plenty - classic dry astringent and almost tannic champagne yeast, red apple sugars - could be drier, some dusty, chalky and slightly mineral notes too. lively carbonation, light body, relatively dry finish. nice offering but less sugar would benefit this product.

Bouteille 750 ml, 7%. Couleur jeune très pâle, claire, grande effervescence avec des centaines de petites bulles vigoureuses. Arôme de pommes sucrées, doux et un peu d’acide. En bouche, rafraîchissant, belle effervescence, notes de pommes assez présentes mais tout en douceur et en finale avec une légère acidité qui enrobe le tout. Très bon.

Bouteille verte de 750 ml, avec bouchon de liège, achetée chez La Vieille Cave (Mont-saint-Hilaire, QC) sous le nom de "La Vieille Cave". Arôme: Légère odeur de pomme. Apparence: La couleur est blanche translucide avec une moyenne densité de bulle. Saveur: Goût de pomme Cortland avec une pointe de miel. Durée moyenne de l’arrière goût. Palette: Le corps est moyen avec une texture minérale. Forte effervescence en bouche. Légère présence de pomme en arrière goût. (Rating #5345)

Bouteille de 750ml récolte 2011. Vieillie 15 mois en fût. Superbe robe jaune avec de belles bulles fines. Nez de jus de pommes fraiches et compotées, brioché à la manière d’un blanc de noir. La bouche est fraiche, vive d’une belle acidité, touche piquante agréable sur le bout de la langue. De la grande classe.

strong fresh pressed red delicious/spartan apple aromas, sugars are much more aggressive than the Crackling Cider. Carbonation is higher, CO2 bubble size is also larger, smothering the entire back of the mouth and down to the throat causing a burping reflex. Clean apple flavour from start to finish, medium tart finish. Also very clean.
