COMMERCIAL DESCRIPTION
We salute Don Gavino with this tart guava ale, aged in chardonnay barrels to create a balance between the sweetness of the base beer and fruit with the tartness of the lactic fermentation.

Tap at CBC 2014. Beer in the glass golden-copper coloured, nice head. Alcoholic aroma. Starts moldy, alcoholic, fruity-dry. Bitter finish. Not my favourite.

Bottle at home. Sour fruit nose, wine barrel. Tart and fruity. Big fruit flavor, guava, berries, cherries, wine barrel. Good stuff. Pinkish hued body.

Bottle poured into a brandy snifter. Pours a clear amber with a big white head of foam. The aroma is lactic tartness and big fruits. The taste us mellow fruit with a mild sourness coming through. Big body and medium carbonation.

Hazy amber/toffee colored pour. Big off white head. Tons of lacing as it slowly recesses. Quite a sour fruit aroma. Taste is malty with a huge fruit note. Slightly sour with a bit of tartness.Some caramel.

Keg at the Copenhagen Beer Celebration 2014, red session. 03/05/2014. Clear bright orange coloured pour with a lasting white head. Aroma is apple brandy, sharop and light mellon fruits. Flavour is apple, peach and mellon, some straw and citrus. Barrel character is low and well integrated. Palate is dry, crisp, with a touch of sharpness. Nice beer with nice fruit character.

Appearance: Pours honey gold with a thin dense white film.

Aroma: Light guava , dank weed, wine barrel, grass..

Taste: Big Brett/ white wine. Industrial, pineapple brett. Pale dry malt. I didn’t find the base beer to be all that sweet, as mentioned in the product description. Gonna guess 7% ish on the abv..

Mouthfeel: Full bodied ,average carbonation..

Overall: Tart, refreshing, complex, aromatic. Reminded me of my early experiences with Nebraska Brewing’s barrel aged farm house beers, which is a compliment.

Draft Sample @ Brewvival 2014. Amber pour with a moderate white head. Funky fruity tang. Tropical fruits rubbed in sweaty underarm. Lemon tart flavor. Funky buggy yeast and fruit smoothie. A bit farty, soupy. Medium body, soft carbonation. Better than the sum of its parts.

Clear dark amber - orange color with a average, frothy, good lacing, mostly lasting, off-white - light beige head. Aroma is moderate malty, caramel, pale malt, moderate hoppy, citrus, tart fruit, wood, grapes - wine. Flavour is moderate to light heavy sweet and light to light moderate acidic with a long duration, tart fruit, wood, citrus, grapes - wine. Body is medium, texture is watery, carbonation is soft. UPDATED: JUL 13, 2014 Bottle. Clear dark gold with a thick white head. Aroma is guava, funk and bread. Taste adds diacetyl (in a good way), a little wood and some tartness. Thin crisp mouthfeel. Great.
