COMMERCIAL DESCRIPTION
We salute Don Gavino with this tart guava ale, aged in chardonnay barrels to create a balance between the sweetness of the base beer and fruit with the tartness of the lactic fermentation.

Nice hazy, golden and red pour. Once this baby warms up the guava and Chardonnay barrels really shine, even has a nice mellow funk aroma. The guava, acidity from the barrel and the overall sweetness seem to battle each other. I think this is a pretty damn interesting brew and I wish I would’ve grabbed a few more while I was at the brewery on top of my el catador allotment

Hazy golden pour with a white head. Aromas of guava, funky yeast, wine, oak, and some sourness. Flavor is tart guavas upfront with some nice oaked chardonnay character in the finish. Easy to drink and refreshing. Very complex and well done!

My Bottom Line:
Guava fruitiness, earthy yeast and finishing tartness are all brought together by soft effervescence before oak seals each sip.

Further Personal Perceptions:
-A veil of foam covers the cloudy amber.
-The relative leanness of the body (for Cigar City) and quenching tartness make this beer quite personable.
-All flavors feel equal in here; none try to dominate.
-The guava character is pleasantly blended into the rest of the beer. It could have passed as a tropical hop and yeast blend. The same could not be said about the Peach IPA, for example, which felt artificial on that front.

Bottle @ Steve’s Super Bowl party. Thanks homer! Pours a murky dark orange appearance with a fizzy, off white head. Definitely some white wine in the nose with some pineapple and acidic tropical fruits. Guava comes through in the flavor which elicits a touch of stomach acid. Finishes quite dry and moderately tart. I fairly enjoyed it but wasn’t blown away. Others at the party liked this better.

Pour out of 750 mL bottle, hazy red pour with white head, aroma brought notes of nice guava, vanilla, some lemon, biscuit, bread, hints of white fruit with peach, pear, touch of white grape, finishing sweet. Taste is a mix of nice peach, pear, guava, grape into a bit of oak, slight earth, finishing slightly tart, slightly fruity. Tasty.

Cloudy, murky, ugly gold color. Pours with copious amounts of tiny bubble white head, which subsides quickly. Acetic guava aroma doesn't hide the Chardonnay barrel or highly active yeast. Fruit is there, but muted and plays second fiddle to the yeast character. Shares some qualities with the sour Guava Grove batches, a bit too active/yeasty, needs more sourness and fruit. Gonna sit on my other bottle for awhile in hopes it improves.

Bottle from El Catador Pours a slightly hazy dirty golden color with a huge fluffy white head that persists forever. Aromas of tart and sour tropical fruit with an earthy mineral edge. Light vinous and woody notes round out the aroma. Tart sour pineapple and I would guess guava fruit. Earthy funky flavors with a hint of Chardonnay and light ethanol. Medium body with a moderate level of carbonation and a tart almost chalky mouthfeel. I enjoyed this a bit more than the other guava beer I had from them. Tart and funky with a bit of earth.

Pours honey-golden with medium carbonation. Smells very vinous. Tart! Taste is a little thin. Was hoping for more guava. It is faint, with the chardonnay taking the front seat. A good brew, but could use a bit more rounding out from the guava itself.

12/26/13. 750mL bottle shared at the QC tasting. Deep golden pour with a nice off-white head that sticks and laces well. Lots going on in the aroma, woodiness, winey aspects, funk, light tartness, guava funk, and more. Lightly tart flavor, mild wood and chard, plenty of fruity guava, melds well with the funk. Refreshing, not overwhelmingly tart or sour.
