Pours dark deep gold with off white head. The aroma offers up apricot, peach, pear and apple mixing with salty malts, a mild pepper note and hints of yeastiness. Hmm. The taste is full of pears, apples and apricots blended with notes of grainy malts and funky yeast. It gets both salty and a bit peppery to midway with growing yet mild levels of spicy cedar. Interesting.

I could drink this beer by the gallon. Pours a hazy yellow with a small white head. Nose is cedar, lemon, sweet malt, yeast, spices, and wood. Flavor is similar- cedar up front followed by lemon, citrus, and sweet malt. Medium in body, and a delightful biere de garde overall. Complex in its simplicity.

Pours a unclear dark gold with a bubbly white head that dissipates quick. Bursting aroma of fresh pine, cedar, spice and yeast. Sweet entry that subdues into light vanilla and wood then quickly into strong cedar wood spice, lemon rind and yeast. Finishes very spicy and dry with a quick note of alcohol.

From the 750 ml bottle. Light amber pour with a thin white head. Grapefruit hops barely cuts through the huge cedar wood nose. Clean malt with a big grapefruit hop bite and cedar woodiness. The best of the series.

there is an exuberant amount of herbs and spices that I cant ever begin to describe.still the flavor is amazing with a very strong maltiness. while there is a lot of spice the hops are not very strong, still its quite a feat.

Backlogged rating (Joe Peesie Beer Porn gathering), thanks Zach: Golden hued with a good lasting head. The aroma has notes of oak, lemongrass, mango, white pepper, ginger, resiny hops and bready malts. The taste has a lovely balance of spice, booze, fruit and bitterness. I like the touch of cedar tannins and overall spicy notes. The mouth feel is lively yet smooth, a tad sticky. Overall a successful brew that i would gladly try again.

THX! To Sebletitje. 75 cl. bottle sampled. Aged on Spanish cedar wood (apparently they stuff they use for cigar boxes to age the stuff – fitting) saison with coriander and ginger. Pours bright orange with a touch amber, oakish, white head. Nose is very unique, I suppose that this is Spanish cedar, its huge, sweet fruity wood, soft, juicy wood, fruity, berries, light sour tang pure wood, ginger, tad sharp,… wow this is new. Picking up lots of ginger in the taste, I assume what is the cedar, stringy, juicy wood, very sharp, hard to describe, sour fruits & more-so sour berries, wild berries, orange peel, fresh grapefruit juice, hint of pear, sour pine, peel,… This is a bit much to take in, I am not even too certain whether I like it or not, bit hard to tell, it is more interesting. Clean, sharp body. Interesting stuff.
