The Cracker Cowboys of Florida were colonial-era settlers, often of Scots-Irish descent, who arrived in Florida when Spain traded their territory of La Florida to the English. The term Cracker in Florida usage relates to the whip these "cow hunters" used to herd cattle in Florida’s Palmetto Prairies. Called Quáqueros by the Spanish, these hardy and hard working Cracker Cowboys helped to shape the history of Florida, the nation’s oldest cattle raising state. We brew Florida Cracker White ale with unmalted wheat, orange peel and coriander and then ferment it with a French Saison yeast strain to give it a spicy and dry finish. Perfect for a warm day on the Palmetto Prairie.

A nice take on the Belgian white. Pours brite yellow and cloudy with a tall white head. Aroma is easy and pleasant with notes of yeast. A crisp beer with a lot of wheat and citrus.

Shaker pint draft at the Cigar City Airport Pub in Tampa, Florida. The pour is a cloudy yellow white with a smallish white head. The aroma is lemon citrus coriander along with general Belgian spice. The taste is the grain wheat along with citrus peel and the Wit yeast. Above average spicing. The palate is light bodied, unfiltered mouthfeel soft carbonation and a wheat grain and grass finish. Solid.

Can. Pours a hazy yellow gold body under a small fizzy white head that faded to a wispy film. The nose is pretty nice, restrained coriander and orange peel with some nice yeastiness and wheat. The flavor is pretty nice as well, maybe a touch heavy on the coriander for me, but it’s not terrible. Nice amount of yeastiness though. Light bodied and quite refreshing with an almost creamy texture. Good beer.

Hazy gold with a small white head. Coriander and citrus aroma. Taste is bread, spice and citrus. Greater than the sum of its parts.

UPDATED: APR 2, 2015 Can from... somewhere. Enjoyed at the TLF. Wow that’s refreshing. Nice hit of lemony citrus with some yeast and wheat. Almost a touch of tartness too. Very enjoyable.

Pour from a can is a hazy light straw with a white head. Aroma is very subtle. It definitely has a nice taste with hints of coriander and orange zest. Goes down easy with no after taste.

This starts of pouring w/ an enormous white head which is typically indicative of a beer being overcarbonated which is usually due to it being infected. Thankfully, if this does have some sort of bug though, it is either fairly benign or has not advanced far as it tastes reasonably good. Aside from that huge head, it looks OK, maybe a bit darker orange than I think of as ideal for the style but good and cloudy as you would expect. Nose is a but bready--maybe a bit of a sourdough thing but that might be my imagination--and there is a bit of citrus. Definitely a lot of orange peel and corriander in this and it really jumps at you once you taste it w/ a strong orange flavor. This is very with tons of carbonation--though it somehow manages not to be harsh. It is also a little thinner than I’d like as it just doesn’t have the creamy but light texture I look for in a wit. It finishes w/ a load of prickly carbonation across the tongue and a touch of tartness and sweetness. In any case, if you are deciding whether or not to try this, I would sugest holding off for a while. It seems to be a good beer but there is something a bit awry w/ this batch. Still, it is good enough that I’d be happy to try this again later just to see if the next batch was any better.
