COMMERCIAL DESCRIPTION
The Cracker Cowboys of Florida were colonial-era settlers, often of Scots-Irish descent, who arrived in Florida when Spain traded their territory of La Florida to the English. The term Cracker in Florida usage relates to the whip these "cow hunters" used to herd cattle in Florida’s Palmetto Prairies. Called Quáqueros by the Spanish, these hardy and hard working Cracker Cowboys helped to shape the history of Florida, the nation’s oldest cattle raising state. We brew Florida Cracker White ale with unmalted wheat, orange peel and coriander and then ferment it with a French Saison yeast strain to give it a spicy and dry finish. Perfect for a warm day on the Palmetto Prairie.

Pale and hazy. Fruity and light spicy aroma. Light body. Fruity (lime) and with a hint of spice. Not super exciting but it is quite refreshing, something that comes in handy down here.

Draft sample. Poured hazy golden color with an average frothy white head that mostly lasted with good lacing. Moderate yeast, coriander and sweet citrus aroma. Medium body with a smooth texture and soft carbonation. Medium spice sweet flavor with a medium sweet spice finish of moderate duration. My expectations where met with a refreshing beer.

A hazed blonde wit with a thin white head. In aroma, beautiful banana esters, cloves, coriander and light sulfur. In mouth, a classic wit with bananas, cloves, creamy mouthfeel, nice. On tap at brewery, Dec. 9 2012.

Growler… Farewell to ibrew2or3… Cloudy golden ale with a small, creamy, white head. Good retention. The bouquet is loaded with fruity esters, spicy phenols and musky hops. Medium-bodied with a milky mouthfeel and soft carbonation. Grainy, tangy, lightly bitter flavor. Finishes up much the same – grainy, tangy and mildly bitter. Quite nice for a wit… a style I pretty much detest. Growler courtesy of askofficerfriendly!

Can at home in CT. Pours cloudy yellow with a rich, pure white foam head that fizzes away slowly. Aroma holds some inviting notes of lightly tangy lemon and mellow spices. Light sweet flavor with restrained, doughy malt sugars, subtle yeasty wheat, very light straw bitterness, soft citrus fruits, light tang. Light bodied with average carbonation. Clean and quite crisp to finish with moderate sweetness, further doughy malts, light dryness, lemon, soft pepper and spices. A very nice witbier. Hugely drinkable stuff, nicely balanced.
