COMMERCIAL DESCRIPTION
The Cracker Cowboys of Florida were colonial-era settlers, often of Scots-Irish descent, who arrived in Florida when Spain traded their territory of La Florida to the English. The term Cracker in Florida usage relates to the whip these "cow hunters" used to herd cattle in Florida’s Palmetto Prairies. Called Quáqueros by the Spanish, these hardy and hard working Cracker Cowboys helped to shape the history of Florida, the nation’s oldest cattle raising state. We brew Florida Cracker White ale with unmalted wheat, orange peel and coriander and then ferment it with a French Saison yeast strain to give it a spicy and dry finish. Perfect for a warm day on the Palmetto Prairie.

Poured from a can. Cloudy pale straw with small white head. Musty aroma with citrus, coriander and Belgian yeast. Taste is slightly sweet and nice spice. Light bodied with crisp carbo. Nice white Belgian.

Pours cloudy yellow with a small amount of white head and a bit of yeast slurry. The nose is pungent citrus with the orange peel dominating with some other lighter esters. Flavor is very smooth and sweet. again the orange flavors are dominant but there is also a very subtle doughy texture present.

Slightly cloudy deep yellow. Nose of light coriander, wheat, fruity yeast aromas. Wheat, light spice, and yeast driven finish. Definitely leans more towards what I would like of as a French yeast than belgian. Ok for a hot day, but alas it ain’t hot.

Can. For a wit it’s really pretty good. Aroma is light but certainly that Belgian yeast strain in there is coming through. The taste certainly has a good amount of fruitiness and yeasty esters. The main character here is the yeast strain, no question. The peel and the coriander are pretty much an after thought. Finish clean with a faint lingering sweet bread taste. Refreshing.

12 oz. can thanks to Chris. 5.5% ABV per the label. Pours a medium, poorly retained, white head over a cloudy light gold (SRM 4) body.....nose is coriander, light citrus notes, wheat, no hops, light clove, balance to the adjuncts.....taste initially is light floral honey notes, with light wheat, coriander, orange peel, becoming dry with very slight finishing bitterness from the hops....mouth feel, light of medium body, no alcohol, carbonation high with moderate acid. This is a light clean refreshing beer. I would like a bit more coriander, but otherwise it is a very well done beer. BJCP 8/3/14/4/7

Hazy pale yellow color. Light, refreshing, yeast spiciness, and citrus and spice notes. Great summertime beer. Perfect on a hot day. A good version of the style.

pours a hazy, golden with minimal head, smell of banana and citrus. The aroma of the saison yeast definitley shines through. Bitter and spicy on the palate but the finish is clean and somewhat abrupt. Overall this is a great refreshing beer for a hot summer day.

French Saison yeast?! That must be why this stuff is so good - it’s probably the best Witbier I’ve ever had. Incredibly refreshing with just the right amounts of spice and citrus.
