Guava Grove is an American Sour Guava Ale that experiences three fermentations. Primary fermentation is conducted with lactobacillus, a bacteria that sours the wort. The secondary fermentation takes place when we add a saison yeast that is French in origin. The tertiary fermentation is spurred by the addition of one of Tampa’s favored fruits, guava. The acidity of this elegant ale cuts fatty foods and oily fish from the palate beautifully. Pairs well with mussels cooked in gueuze, ceviche, ferrines and rich, creamy cheese or cheesecake.

On tap at the brewery. Amber and cloudy with a very small white head that disappears. Aroma is tart with notes of guava, passion fruit, mango, pineapple, and funk. Taste is sour, tons of fruit...guava, strawberry, pineapple. Fairly dry.

Cask at WOB. Cloudy orange pour with a thick white head. Big guava, tropical fruit notes along with tart acidic notes. Light fruity tart guava taste with clean crisp malt. Finishes acidic.

Bottle shared by thebaldwizard. Clear amber pour with a thin white head. Aroma of sourness, tropical fruit and malt. Malty flavor with tropical fruit accents before a sour finish.

Tasted on 2/8/14 from a bottle at the hotel after the RBWG Grand Tasting. Pours cloudy light orange with an average white head that slowly recedes to spotty, average lace. The nose is tart, plenty of fruity guava, some golden raisin. The flavor is creamy lactic sour fruity guava with the same sweet golden raisin underlying. The body is medium with average, stinging carbonation, and a long tart guava finish.

The beer is orange with a mild haze and a soft, white head. Aromas of lemon, floral hops, tropical fruit. Easy drinking. Hop goodness. Hop forward with a light malt body. Tart lemons and fresh hops, finishing with medium bitterness. Quite tasty.

750 ml bottle. Pours a hazy golden peach orange with wisp of surface head, no lacing. Aroma is funk, sour fruit, and saison yeast. Flavor is same, with notes of sour peach and intense carbonation. Medium bodied, lactic finish.

Late Nights @ RBWG, Asheville. Golden color with a small head. Custard and tropical fruits on the nose. Earthy lemon rind. Similar flavor. Yeasty. Lactic funk and tropical fruits. Mellow sourness. Light body, zippy. Pretty good.

This was a spoil of war brought down from Anchorage’s Culmination festival. This was poured into a snifter. Etched ever so slightly into the bottle just above the label reads "03/05/14." There was a hazy burnt orange color with a one finger white foamy head that concaves really nicely to leave some speckled white lacing sticking to the glass. The smell had the Ruby Red grapefruit up front and then comes the guava with a decent dose of mango at the end. The taste starts off just a little tart but it seems as the beer gets warmer it gets more tart and sour. On the palate, this one sat right at a medium on the body with a fairly decent sessionability about it. The carbonation was actually fairly subdued but still showed it’s face just a tad. Overall, it fits the bill for everything Cigar City said it should be. It is good for what it is but actually still a bit too sour and tart for my liking.
