Murky copper pour with a half inch off-white head. Tons of citrus hop swim in a sea of cedar. Like opening up a cigar box or a cedar chest. Taste is similar to the original Jai Alai, but turned completely on its head. Nice balance between sweet and bitter. The cedar adds a completely different dimension. Very complex. It lends a soft, mellow, vanilla and wood flavor to the beer. Unbelievable. Nice medium body with a touch of sticky resin. Amazing beer.

Bottle. Pours dark orange-brown with a slightly off white head that leaves bold lacing on the glass. Aroma is orange, lemon zest, spice, hints of caramel, and the spanish cedar. It smells as though I am in a walk-in humidor. Flavor is grapefruit upfront followed by spiciness and slight hints of vanilla. On the palate the beer is extremely bright and crisp with the hops that are enhanced by the spanish cedar, there is a malt backbone that provides just the right amount of sweetness so there is no lingering bitterness. I wish I had a cigar to pair. This is simply wonderful!

Bottle, extra from newcigarz. Mostly clear amber with a huge off-white head. Aroma is citrus, caramel, wood. Taste is medium sweet, medium bitter, with the cedar coming in quite strongly, some alcohol as well. Finish is mostly dry and hoppy, a little sweet. Full bodied, moderate carbonation. This drinks like a big DIPA, and I’m not a fan of the cedar at all.

UPDATED: APR 24, 2014 Pours somewhat hazy dark golden with half finger of wispy head. Nose is lots of grapefruit, floral hops, cedar, I totally get the humidor Spanish cedar cigar box note. Taste starts off with grapefruit and citrus, then I get a ton of cedar and wood, then we get that bitter grapefruit peel and woody cigar box on the finish, also I get cinnamon and more cedar in the aftertaste. Balanced between the bitter grapefruit peel and he sweetness of the fruit, and a lot of cedar and wood smoothing it out. Very cool take on an ipa. Sweetens and fruiter as it warms. ---Rated via Beer Buddy for iPhone

UPDATED: NOV 6, 2011 Dark honey color. Smells of what I assume to be cedar. Pretty good beer this one.

Poured a very cloudy dark orange with a half finger’s worth of head. The aroma is high on cedar and some sweet bread dough. The taste is high on the floral hops up front, with the lighter sweeter cedar coming in on the aftertaste. The carbonation is quite soft as well. I’ve had oak aged ipa’s that did not work at all because the tastes contrasted so much. Not so with this one. Excellent combination.
