A- cloudy amber/orange with a big fluffy slightly off white head. Lacing all the way down the glass.
S- the smell is great. A lot of passion fruit, pineapple, mango. Really like a sweet tropical fruit salad.
T- it tastes the same as the smell. The hop flavors are on the fruity/aromatics side with a bunch of tropical fruits. Has a slight hop bitterness to balance it out. I'm not sure if I tasted the cedar.
M- medium mouthfeel, a bit sticky, bit low on carbonation (it needed more). Has kind of a fuzzy fruit nectar mouthfeel. Very drinkable.
O- I liked this beer a lot. It's not an IPA for hop heads. It's a very mellow laid back type of IPA. I like that its a bit more about the flavor of the beer without trying to crank up the hops. Very good, very drinkable.

There’s an oak presence in the form of a cedar flavour, The hops are buried even fresh. A bit out of style, of course This is one of my favorites ever!.

Pretty good stuff. Stong cedar smell and taste, like the things in my dads closet with his suits when I was a kid. Enjoyable to sip on but couldnt drink a lot of it. I like the White oak better but this is still good.

Big bottle, rated from backlog. Hazy golden color with white head. Aroma of pine, grapefruit, and the always-present cedar. Taste is cedar, grapefruit, and pine. Very nice, but a bit too many wood notes

12oz Bottle. Wow, Sean! Wasn’t expecting to get to try this! Never had a Spanish cedar aged beer before. Big popping hop nose, loaded with grapefruit and a hint of distant woodiness. Up front, it’s a flavor explosion bomb. The sweetness of the flavors hops comes up quickly, but then the Spanish cedar crescendos and drowns out the hops for a major of the palate. Strong, particular Spanish cedar. This is unique. The emergent flavor is dry, white bitter grapefruit pith. Gin. I like Spanish cedar, I like the underlying hoppy beer, but I feel like it’s out of balance, with the Spanish cedar dominating, not contributing. Fun to try.

Chrystal golden color with thick foamy white head. Smells bread like with a note of guava and grapefruit. Malty front note and a dry finish, almost like citrus pith.

Bottle. Dark opaque amber pour with a foamy white head. Piney hop aromas. Crisp and somewhat dry with piney hops and earthy wood notes. Good mouthfeel and balance.

Rated 3/28/13. Thanks to Momar42 for the 12 oz bottle! Poured into a Duvel tulip.
A: Pours a hazy dark copper color with many yeast particles floating about. The head is a two finger white shade. Retention is fine, but the lacing left behind is great.
S: The cedar qualities here are downright shameless - to the point where they nearly overpower the trademark tropical fruit aromas of the regular Jai Alai. Honestly, though, it works in a strange way. Strong black pepper, smoke, and phenolic notes are prevalent, too.
T: Again, the word ’shameless’ comes to mind when describing how the wood aging impacts the flavor profile. Citrusy hops exist as a secondary player behind the cedar, and create a minor effect of emphasizing notes of black pepper, pine, and smoke. One of the more complex IPAs I’ve ever had. It never balances fully - considering how much of the wood qualities come through, it’s probably as balanced as it could ever be. The cedar harshness calms down after several swigs, too.
M: Like the base (Jai Alai), it’s very dry yet unclean. The texture is light and crisp enough where I’d call it refreshing. Good ease of drinkability, as well.
O: I applaud the experimental bend of this brew, and it succeeds at a moderate level. It’s quite tasty, but I think regular Jai Alai is just a smidge better.

Hazy orange pour. Smells like a tropical fruit salad on a cedar plate. The cedar smell is bit strong. Taste is the same with a creamy palate, much like the white oak treatment. Taste is much better balanced than the nose. Another great one from CC.
