Guava Grove is an American Sour Guava Ale that experiences three fermentations. Primary fermentation is conducted with lactobacillus, a bacteria that sours the wort. The secondary fermentation takes place when we add a saison yeast that is French in origin. The tertiary fermentation is spurred by the addition of one of Tampa’s favored fruits, guava. The acidity of this elegant ale cuts fatty foods and oily fish from the palate beautifully. Pairs well with mussels cooked in gueuze, ceviche, ferrines and rich, creamy cheese or cheesecake.

Late Nights @ RBWG, Asheville. Golden color with a small head. Custard and tropical fruits on the nose. Earthy lemon rind. Similar flavor. Yeasty. Lactic funk and tropical fruits. Mellow sourness. Light body, zippy. Pretty good.

This was a spoil of war brought down from Anchorage’s Culmination festival. This was poured into a snifter. Etched ever so slightly into the bottle just above the label reads "03/05/14." There was a hazy burnt orange color with a one finger white foamy head that concaves really nicely to leave some speckled white lacing sticking to the glass. The smell had the Ruby Red grapefruit up front and then comes the guava with a decent dose of mango at the end. The taste starts off just a little tart but it seems as the beer gets warmer it gets more tart and sour. On the palate, this one sat right at a medium on the body with a fairly decent sessionability about it. The carbonation was actually fairly subdued but still showed it’s face just a tad. Overall, it fits the bill for everything Cigar City said it should be. It is good for what it is but actually still a bit too sour and tart for my liking.

Bomber to snifter (shared with tastybeer and our ladies). Looks good; a hazy paler caramel with off-white head. Smells solid; lacto with mild guava and malt. Tastes like it smells with a solid mouthfeel that’s medium-bodied. Enjoyable.

Bottle from Eric and a completely different throw down vs Pipeworks Guavanatrix:

Deep golden hue fading minimal head. The lacto is quite apparent in this beer... too much so. Sadly the CCB has major bandaid medicinal notes and the souring agent overpowers the delicate fruit. Get rid of the off flavor then I think we are on to something here. It got whipped by the Guavanatrix.

Draft sample at Sourfest. Small snifter. Orange-brown pour with light white head. Head lasted and laced. Aroma is sweet bread, orange, passion fruit, guava, lacto yeasts, sweet tarts. The taste is more sweet than I was expecting with orange, passion fruit, guava, tart citrus notes, sour yeasts. Low carbonation, orange and citrus overall finish with sweetness.
