Rating # 3900, 31/12/2011. Cheers to Dave, his own CCB farewell beer to finish the year, and thanks for bringing this all the way from Arizona to Belgium. Started off nice, sadly, this is another cedar treatment that just shows signs that too much cedar kills the cedar. In this case, all the good profile of the Hunahpu peppers are drowned in an overpowering load of cedar wood.
Pours amber-mahogany with a light quickly disappearing off-white head.
Aroma of light caramel malts, toffee, chocolate malts with cedar bark that is subdued adding only a touch of typical cedar spices.
Palate is complex leading to a brown sugar mouthfeel with some toffee/caramel sweetness coupled with some chocolate and scarce cocoa nibs, added touch of dark fruits. The whole profile expands into a warming peppery finish that is pretty much ruined by a punch of cedar woody/spiciness. The peppers linger in the aftertaste with a sticky sugar notes on the lips.
After a second glass, everything disappears and is swallowed by a vortex of cedar spices. Only a mild touch of cocoa nibs and pepper heat save the day and bring a faint reminder of the Hunahpu profile.

Flip-top fill courtesy of Ibrew2or3. Thanks for the special treat! Pours a rich deep darker brownish pour, some ruby and lighter brown glow on the edges. A looose bubbled head dies to a small ring, no lacing. Thicker and darker. Aromas are sticky and sweet, biscuits and toffee meet some peppery heat, touches of cocoa nibs. A gentle kick of oxidation comes into the fold, some sweet dried fruits and brown sugar. More cocoa and peppers as it breathes. Gentle dark and sticky sweetness moves into that dark cocoa and peppery backend. Initial is sherry and touches of toffee, sticky sweetness, oxidation. Touches of red fruit and cocoa grows up front, sticky and thick, raisins. Middle shows a staunch difference, moving over to the peppery kick. Ancho peppers, touches of spice, and cedar work together to give an interesting lingering take into the backend. Overall, the beer could use some more carbonation, falling a bit flat and thick in body, backend offers a pleasant spicy quality, getting away from the overly sweet and sticky front, oxidation effects. Firm and interesting. An honor to try. Cocoa, almost a minty feel from the cedar synergy. An odd one with too much sweetness and cedar to work for me. Thanks!

Fliptop handbottle thanks adam. Pours reddish brown with small head. Aroma is loaded with cedar, cinnamon, and brown sugar. Flavors are intensely cedar and sweet brown sugar, and cinnamon. Really sweet finish, way over the top with sweetness And cedar, rather flat too.

Respectfully handbottled by Ibrew2or3, thanks man. Pours a clear and brown beer with a weak offwhite head. The aroma is malt, caramel, sweetness, bread and some alcohol. The flavor follows the nose with additional chilli pepper. The palate is sweetness. Overall a really good beer.

Hook up thanks to the Barley Wine master David. Pours a dark red/brown color with a medium white swirling head. The aroma is huge amazing cedar and huge sugary sweet caramel and candies. The flavor is also dominated by sweet candies and caramel, almost sticky it’s so sweet but the cedar is just so awesome and massive. Brown sugar. Damn good.

Handbottle provided by Stobbe74, thanks a million. Clear dark brown body with no head. Aroma is sweet, dark fruit, alcohol, caramel, peppar notes. Flavor is very sweet, peppar, burnt caramel, alcohol notes. Thickles a bit on the tongue. Low carbonation probably because its hand bottled. I’d love to taste this "fresh".

Near black with a lasting tan head. Aroma of chocolate, fruit and complex spice, elegant cedar notes, something you could just sit and sniff forever. Sweet malt, toffee, dark sugar flavour with interesting notes of cedar and peppers. Complex and interesting though too sweet
