COMMERCIAL DESCRIPTION
This is an American White Oak-aged version of Jai Alai India Pale Ale. The white oak adds smoothing notes of vanilla and slight hints of dill to the aroma and flavor profile. The finish is elegantly dry due to the light tannin notes from oak aging and though still loaded with hop flavor, hop bitterness is more restrained.

Call me crazy, but I think I get hints of coconut in this beer, both in the aroma and aftertaste. Iím not a huge coconut fan but it kind of works here. Otherwise this is a very mellowed version of Jai Alai. Itís a smooth drinker but a lot different from itís non-aged sibling.

Candy in my mouth. The addition of white oak in jai alai kicked the ipa up the extra notch I didn't even know it could reach.

12oz can Ė domed this morning, hair of the dog style. Aroma is pine, coconut, some cream pie and light stone fruit. Domed out of the can, so I did not get a chance to see the color and head, but untappd tells me that its clear burnt orange with a nice eggshell foam. Taste is up front vanilla cream pie with waves of coconut, like toasty oak and pine. Love the tropical flavors of peach and coconut. Body is medium, creamy, pillowy, with nice soft carbonation. Finish is light bitterness, stone fruit, oak, and more coconut. Didnít expect this much tropical flavor and itís very different than the first can Iíve tried. Excellent!

12 oz can (canned in January 2014). Clear, light amber color. Thin, off white head, with 1 bubble layer retention. Aromaís out of the glass: wood, oak, vanilla, still subtle. Once in the mouth, retronasal, it becomes a true oak bomb, heavy vanilla, oak, tannins, bitterhop and malty sweetness. Flavor is rather sweet, vanilla, and rather bitter. Medium bodied. Finishes somewhat dry, tannins, and eventually quite bitter. Good experiment and I really like this. Superb.

UPDATED: JUN 4, 2014 Can: vanilla plus floral aroma. A fantastic take on an IPA. If you love a floral IPA with hint of vanilla and oak full of hopped up goodness, cheers! ---Rated via Beer Buddy for iPhone

Can thanks to Will. Pours a cloudy orange with small frothy white head. The aroma is strong white oak, floral hop, and citrus. Medium mouthfeel with strong dry hop, oak, and light bitter finish. Good.

UPDATED: MAR 1, 2014 This is one of my favorite beers of all time! It pours a cloudy orange, small particles are normal for wood aged beer, and this has some. Off white medium head, dissipates slowly. Aroma of toasted marshmallow and vanilla. Taste of marshmallow, orange and vanilla dominate while a slight dill/pepper flavor plays far in the background. If you can find this beer it's well worth the drive to get it. This is a much have for any wood aged/IPA fans out there.
