COMMERCIAL DESCRIPTION
This is an American White Oak-aged version of Jai Alai India Pale Ale. The white oak adds smoothing notes of vanilla and slight hints of dill to the aroma and flavor profile. The finish is elegantly dry due to the light tannin notes from oak aging and though still loaded with hop flavor, hop bitterness is more restrained.

Wow, great stuff. Pours a deep orange, cloudy. I actually had a bit of sediment on the bottom of the bottle. Great head and retention. Taste is a little subdued hops, very viscious. I could drink a ton of it.

Bottle pours a cloudy gold/orange pour with a nice strong creamy white head. Scent is fruit, wood and hops. Taste is wood, citrus and hops. Creamy. Everything a great IPA should be.

UPDATED: FEB 24, 2011 Aroma is somehow creamy oak with loads of hops, fruity, floral, blue cheese. Niiiice. Flavour is fruity wood, lavished with hops, quite sweet and quite bitter at the same time. Perfect balance. Good good stuff.

Bottle from secret santa, thanks! Aroma of very smooth hops, delicate pine, floral and pleasant. But it did not prepare me for the awesome flavor. Huge explosion of flowery hops and a perfect touch of oak makes this very very drinkable. Amazing balance. Great brew.

Bonus from MikeLuke23 in a recent trade. I already liked Jai Alai so I was jazzed to try this. Aroma: Smells like coconut and grapefruit for sure. Really dig it. Appearance: Rather murky burnt orange color with a thin white head. Taste: Love it, the oak really adds some great coconut flavor to this already enjoyable ipa. I am really looking forward to my trip to florida this month so I can pick up a of these to take home with me.

Now this is how you oak age an ipa!! Right off the bat, a big pungent whiff of piney hop resins, and light tropical fruit, and then a good dose of nutty oak. The carb and mouthfeel are just about perfect. The finish is light and crisp, medium bitterness, and a nice piney aftertaste. The oak is not overwhelming, its very complimentary, adding a subtle yet very tasty nutty oak character. Impressive beer!

Pours a dark orange-amber with thin white beaded head. Aroma is smokiness from the oak and fruity citrus hops with hints of citrus and peaches. Taste is fruity and smoky with hints of grapefruit, oak, green bananas, and peaches. I like the aroma better in the standard Jai Alai, but this one probably has the better flavor. Either way, you can’t go wrong. Great beer!

From the firkin at CCB’s IPA day celebration. Wow, this was just amazing. Poured an opaque golden orange from the cask with thin white head and decent lacing on the way down. Aroma is of the oak, zesty and sweet, with plenty of hop backbone, and a slight pineapple/citrus note. Taste is like a pina colada IPA; the oak adds the coconutty sweetness, the hops add a citrus character, and I can swear they put pineapples in this as well. Very assertive with the wood and the hops, but amazingly well balanced. Probably one of the better treatments I have ever had of an IPA.

So much going on with this beer, unique and complex. Appearance is a murky dark golden color with sediments visible. A 1/2 finger white head lingered for a few sips. Aroma was nice and mellow with soft oak and then it hit you with some nice tropical fruits of orange zest and just a little grapefruit. It follows with dill pickle, so unique but so nice! On the palate there was nice oak up front followed by the orange zest in the middle with that dill in the background. It finished with some lingering earthy hops and just a hint of the grapefruit. Mouthfeel is what brought this beer up a notch with a medium body that was silky smooth with some soft carbonation.

UPDATED: MAY 9, 2013 Buttery licorice aroma. Deep oak taste, but the white oak has kind of a charred oak flavor. Has that jack daniels charcoled mellowedness to it. Tastes like something fried in butter over a campfire. Insanely smooth. Really like this one.
