COMMERCIAL DESCRIPTION
Flemish-style red diverted into used rye whiskey barrels; 100% wood fermentation. 13 Months in used American oak rye whisky barrels with proprietary blend of micro flora have created a brilliant deep ruby/burgundy beer. Nose of cherries, vanilla, and whisky. No Fruit Used. Tastes a bit like toasted rhubarb berry cobbler. Allusions of fruit sweetness from the brettanomyces balance the slight tang of bacteria.

Aroma is intensely fruity with lots of dark berry and cherry notes. Medium acidic character to the aroma with a hint of cherry pie. Faint whiskey and medium oak notes. Light caramel and toasted bread quality. Pours a cloudy brown with some copper and ruby notes. Medium thick tan head that recedes fairly quickly to the edges where it lingers. No lacing or legs. Flavor is fairly tart with moderately strong dark, tart, berry and cherry notes. Medium oak quality with a medium light whiskey character that helps compliment the light caramel and toasted malt notes. Some lingering acidity with berry and cherry pie along with a touch of malt and whiskey. Mouthfeel is medium bodied with medium full carbonation. Low astringency and low alcohol warmth. Overall a really nice Flanders style sour with a nice complexity of flavors. I’m glad I didn’t completely forget I had this beer in the cellar. The whiskey character is light but there are hints of it, especially in the finish.

This might be my favorite of the woods series. Reminds me a lot of Rodenbach Grand Cru. Aroma is cherries, vanilla, light wiskey. Taste is cherry tartness with very subtle barrel notes and a nice malt profile that shines through a little at the end. Good stuff even though its really expensive.

750, the personal favorite of the beer buyer at Yankee spirits Swansea. Very tasty flemish red. Wood vanilla characteristics but not much from the whiskey. Tasty stuff

I don’t remember where this one came from but now that I tried it I almost wish I had a few more in the series. Regardless I have enough other American sours to keep my palate busy for the foreseeable future. Eventually I will get around to more Cisco beers as I run across them.

Aroma / Appearance - The mostly opaque rye colored body was darker than I imagined. Glowing with life the red fringe provides life. Spindly legs indicate some alcoholic presence. Caramel brownies, sweet tarts, rye crackers, and a strong Flemish bite result in a beer that is not mild mannered. While not as sour as a true lambic it has that great Flemish bite you would expect from a solid wild ale.

Flavor / Palate - Tart and dry flavors hit the tongue within milliseconds of the first sip. Acidic with an oak finish the texture reminds me of a true Flemish brown. Balanced with a number of flavors to focus on this beer might not be for everyone. However I wouldn’t mind trying another to compare the different versions of Woods out there.
