COMMERCIAL DESCRIPTION
First in Series: Buckwheat, oats, and rye fermented with Brettanomyces and a Saison yeast in a 50 hectoliter french oak cask. Herbs and spices grown here at the brewery replaced most of the hops. On it’s way into package it was treated to a host of microflora to create additional character over time; look for it to gain acidity and dryness. Drinking now: A hazy tight laced golden-orange, herbal and spicy with tropical fruit in the nose. Light-Medium bodied yet somehow slick with very fine carbonation. I’ll be cellaring this and pulling a bottle every month to watch it change. Five year peak? We’ll see.

Bottle. Pours a deep yellow-gold with a frothy white head. Hazy. Nose is tart and lemony, some yeast and white pepper but not quite right. Moderately sweet as well in the nose. Somewhat generic. On tasting, nice lemony tart note note and peppery yeast that gets a bit phenol laden as well. Not bad but just not quite what I expect out of a saison.

Bottle @ home picked up at Mile High Denver. Pours a milky orange appearance with a very foamy, cream colored head. Spicy, funky bretty, spicy oaty, big potpourri, lavender, wheat aroma. Somewhat juicy, lemon citrusy, huge floral/potpourri, fairly funky, barnyard, fairly dry flavor. Kind of reminds me of Trinity Saison Provisional. I could see how a lot of folks may not enjoy this "type" of Saison, but I really dig it.

750 mL bottle. Cloudy golden pour with a thick frothy off white head. Aroma of barnyard, spices, ginger and yeast. Medium body with a lasting tart finish.

750 ml bottle. Pours hazy orange with a large fluffy sudsy white head that slowly settles to a soapy film and some lacing. Aroma is bread and spice pepper some yeast and citrus scents. Taste is more spice bread and floral juicy citrus flavors with a subtle bitterness and pepper. Palate is fizzy/juicy and drying. As this warms it is starting to become more enjoyable.

Tallahassee, Fl - ABC Fine Wine & Spirits - Betton - capped 750 ml bottle. Hazy dark golden-light orange pour - extra fluffy white head that leaves plenty of sticky lacing. Sweet,floral, fruity aroma with some heavy ginger accents. Flavor has a heavy spice accent with the ginger being most prominent; some underlying lemony citrus bitterness, a heavy dollop of yeast. Mouthfeel has a nice thick texture to it and good carbonation. Not quite as refreshing as many Saisons, the ginger tends to get cloying.

Bottle. Pours cloudy lemon gold. Fluffy white head. Nose and taste of peppercorn, lemon zest, wild and farmhouse yeast, sage, tropical fruit, rye bread, buckwheat, orange peel and spicy/herbal malt. Medium body. Finishes slightly dry.

Pours a hazy orange with a finger and a half of quickly settling rocky, white head. Some lacing. Aroma is funky, sour/tart, barnyard, vegetal, herbal, hints of citrus. Flavor is moderately sour up front, building slightly, and then fading into herbal, vegetal, and citrus tones. Reminds me mildly of fenugreek. Strong carbonation, light body, crisp texture, and a dry finish. A nice combination of saison herbal tones and funky sourness. A very refreshing beer.

Refrigerated 750 mL brown bottle poured into a tulip. Pours translucent orange with fluffy off-white head. Thick small bubble lacing, medium body, well carbonated, and herbal aroma. Taste is herbal (mostly camomile with some lavender), some light citrus, and slightly dry finish. Too much camomile for me.

750 ml poured a golden apricot color with a three finger head. nose is tropical fruit and cream of wheat and some sort of herb / spice i cant make out??? taste is wheaty, with a faint taste of papaya and oak. slight funk, but this herb i cant make out is the most prominent flavor. very dry on your palate with a slight acidity that will develop more over time.

pours light yellow nice fluffy head. Nose is wheat and slight citra. The buckwheat, and oats give it a slick mouthfeel nice and easy drinking.

Bottle from Rare Beer Club: sat on this a few months. Pouts hazy, tangerine orange, fizzy subtle white head. Nose is kinda weird with burnt oats, typical Saison funk, grass and cereal. On the palate, lighter bodied with not a lot sweetness as the grass and funkiness gives way to subtle smoked oats. I want to like this more as a Saison fan, but the funk doesn't elevate this farmhouse. Drinkable but only decent ---Rated via Beer Buddy for iPhone
