COMMERCIAL DESCRIPTION
We took everyone’s favorite Imperial Stout (sans coffee) and aged it for nearly a year in fresh Heaven Hill Bourbon barrels, which we then blended in an attempt to tame the bourbon beastliness. Creamy vanilla and smooth oak on the nose complement and round out the roasted, bitter chocolate characteristics. A kiss of bourbon booziness on the palate provides the perfect finish for this rich and decadent tribute to the dark months ahead. Be prepared…winter is coming.

Bottle. Pours black with thick tan brown head. Nose and taste of roasted chocolate malt, toasted oats, vanilla, oak, bourbon barrel, fudge brownie and milk chocolate. Medium body. Finishes with a little bourbon kick. Body on the lighter side of medium for the ABV. As a consequence, the beer is a bit "hotter" than I’d like.

750ml bottle courtesy of deftim13. thanks for this gem, tim! pours a silky, dense mocha that sits black in the glass capped by a creamy, dark kahki head that leaves a tight ring of lace. aroma is outstanding with heavy notes of chocolate brownies, roasted malts, baked brown sugar, and rolled oats backed by vanilla nougat, toffee, and bourbon with a hint of spice cake and dark fruits as it warms. flavor is stunning with dense, rich, german chocolate cake, coconut icing, vanilla, and roasted malts up front backed by smooth, woody bourbon, espresso, heath bar toffee, dusty oats, black cherry cola, and a hint of cigar ash. palate is smooth, silky, and full bodied with a lingering finish of baker’s chocolate and woody bourbon. overall, a truly world class barrel aged imperial stouts.

Thanks to the kind soul who shared this at a recent Tampa Crew Tasting. Pours a nice stout brown with a tan head. Nose is roasted malts, milk chocolate, some cafe con leche, and big vanilla, wood, and booze. Flavor follows delivering on all of the promises the nose makes. Roasted malts, some chocolate, coffee, booze, bourbon, vanilla, and a little beastiness. Medium to full in body with lingering chocolate, vanilla, and whiskey in the finish. Very nice overall.

25.4 oz bottle. Dark brown with a tan head that leaves cool tracery. Nose is molasses, bourbon and dates with light soy and smoke. Smooth medium body with a tang, finishing hot like a shot. Taste is dark chocolate, bourbon and watery roast.

750mL thanks to GT2. Appearance has massive lacing with lasting fluffy caramel foam. Pitch black pour. Aroma is molasses, roasty, milk chocolate, coffee. Taste is very bitter like burnt toast, roast coffee, cinnamon, not hoppy bitterness ; just a roasty bitterness. Wish it had more body and does after a few sips the alcohol is a bit distracting.

750mL for $17. Yikes. Pours near inky black with a larger mocha head. Good retention with webby lace. Nose is rich, subtle bourbon, coconut, no sweet tomato paste. Lots of black pepper. Taste is rich, spicy, dry, oaky, peppery. Mild chili pepper heat. Lactic dark chocolate finish. Lingering black peppercorn. Palate is not sticky or heavy. Medium density, fairly silky, nice bitterness to balance. Easy to enjoy. I think this brewery has a lot of potential. I would have liked to try the straight barrel fill without the blend out, but this works albeit palate is too dry and dusty.

This is up there with the best bourbon aged Imperial Stout I’ve ever had, Bourbon County. Pours a deep ebony with a thick head of tiny bubbles. Huge aroma of chocolate, bourbon and coffee beans. Perfect body, smooth and creamy like a milk shake. Flavors of dark chocolate, a bit of fresh espresso, and a subtle note of bourbon (vanilla, caramel). Finish is clean and smooth with a chocolate/plum linger. What makes this beer so fantastic is the perfect balance of flavors, the subtly notes of bourbon and the complete lack of any solventy notes, which for a 12% beer takes some serious skills. This beer stands on it’s own but if you want to pair it dark chocolate, anything with vanilla (ice cream), or a strong soft cheese (goat, Saga) would be great.

From 750ml bottle. Pours black with thin tan head. Aroma is some coconut, vanilla and alcohol. The taste is charred wood, vanilla and a touch of caramel. The bourbon/alcohol and smoke are pretty prevalent in this one. It overwhelms a lot of the flavor.
