COMMERCIAL DESCRIPTION Aged 13 months in Taurasi (red wine) casks, brewed and bottles for l’Ottavonano. The primary fermentation lasts 2 months in a stainless steel tank, then we transfer the ale to the Taurasi cask, where the barley wine continues the secondary fermentation for 13 months, during which time we refill each day the cask for compensating the beer absorbed by the wood. At the end of the 13th month this amounts to about 20% of the original volume. Then we transfer the barley wine into a stainless steel tank for one month to let the beer clarify naturally from possible traces of wood or dead yeast. Before the bottling we blend the aged barley wine with identical, young beer, brewed 1 week earlier.
