COMMERCIAL DESCRIPTION
Our third anniversary beer us sizes Chocolate Sombrero, using extra ancho chile and adding chipolte pepper. We aged the brew 100% in Wild Turkey and Heaven Hill bourbon barrels. May it leap onto your palate majestically, like a luchador who flies into the ring from atop the highest rope.

Very dark brown, nearly black, with a small light brown head. Aroma of roast, dark fruit, chili peppers, and chocolate. Taste is full of roast and bourbon with some chocolate and a touch of chili heat. The carbonation is almost flat, and itís pretty thin for an imperial stout.

Pours dark brown with a tan head. Aroma is chocolate, coffee, roasty malts. Flavor is chocolate, caramel, vanilla, coffee and a little spicy.

Samples from a 22 oz bottle at the Secret Stash Bash (Atlanta). A: Pours very dark brown with a large, frothy brown head. The head has great head retention and leaves behind a rather full coat of lacing. S: Sweet and fruity aroma with some bourbon. T: Boozy, as expected, given the high ABV and the bourbon barrel aging, but plenty else going on. Flavor notes include sweet caramel, brown sugar, vanilla, light chili pepper and dark fruit. Leaves a strong and long lasting aftertaste in which the chipotles come to the front, along with coffee, light smoke, and some hops. M: Very smooth with a full body. O: A rich imperial stout with excellent complexity. Lots of aromas and flavors; while some of these are rather pronounced at times, none dominate to the point of masking all of the others. Iím eager to try the bottle put in my cellar for aging.

Bottle poured into pint. Smells of chocolate, molasses, lots of vanilla. Tastes very smooth- vanilla and chocolatey with a chili spice on the finish. Very good. Reminds me of Weasel Rodeo.

22oz bottle, bottled on 01/08/13. Black pour, brown creamy head. Huge smells of chocolate, hints of chili peppers, loads of vanilla. Huge flavor. Tastes of chocolate, dark chocolate, roast, bourbon, burnt barley, silent chipotle spice. Finishes with a flavor of chilies, loads of chocolate, and a cough syrup bitterness. Whoa, what a huge Clown Shoes! An excellent beer, well worth the wait. (3654)

Dark black pour from a bomber, slight tan head. Spicy chocolate nose - very nice! Rum, sugar, subtle pepper heat that mixes with the alcohol. Really nice!

Bottle and served in my Old Raspy nonik glass: Pours nearly black with a lasting but small frothy beige head and spotty lace. The aroma has notes of chipotle and ancho peppers, bittersweet chocolate and caramel, roast and bready malts with a dash of coffee, vanilla, oak and bourbon, VERY VERY INVITING! Lovely chocolate and roast notes greets the palate followed by mild dark fruit and caramel before the chilies come aboot and play. Dusty dry finish just as it should be. Unlike the muddled and over-hopped Chocolate Sombrano, this beer is much more fully integrated and complex. Mikey Likey!

Big chocolate nose. Taste has alot going on. Chocolate, wood, vanilla, spices. The chili peppers add a great twist but are nice and subtle. Finish is bittersweet. Really nice

Bottle. Heavy malt aromas of toasted, molasses and dark chocolate, moderate resin for the hops, earth for the yeast, with background notes of charcoal, dried peppers and alcohol. Head is average size, frothy, light brown with good lacing and good legs and is mostly diminishing. Color is clear dark brown. Flavor starts heavily sweet and lightly to moderately acidic, then finishes moderately bittersweet and acidic. Palate is medium to full, creamy with a soft carbonation and a heavily alcoholic finish. Its a little harsh on the palate with the alcohol content, so I didnít like it as much as their other Imperial Stouts. It does go well with fresh out of the oven banana bread.
