Our third anniversary beer up-sizes Chocolate Sombrero, using extra ancho chile and adding chipotle pepper. We aged the brew 100% in Wild Turkey and Heaven Hill bourbon barrels. May it leap onto your palate majestically, like a luchador who flies into the ring from atop the highest rope.

Bottle. Pours a near black color with a very small tan head on it. Nose is somewhat bourbon forward with the roasting coming in underneath. Taste is just a tad roasty with a hint of spice in there and the bourbon coming through later. Quite interesting...

Draft at Jerry’s. Black with whispy, tan head (carrel aged) / Delicate nose of chocolate, coffee, bourbon barrel, cream, chile pepper / Light to medium body, acidic, some sweetness but nicely balanced, dry, light hot pepper finish / Cooked flavors of semisweet chocolate, stale coffee, bourbon barrel, cream, chile pepper, cinnamon / I want to like this more than I did, especially the elegant, light (non-imperial) body, but the flavors have that cooked dullness that ultimately makes it ordinary.

A touch on the boozy side, though the flavors underneath are pretty solid. Your typical beer attempting to be BA Hunahpu and falling quite short; good enough to drink, but off enough to remind you that nobody does it quite like Wayne.

Bomber from Total Wine, Durham. Hey, if you can’t score a bottle of Westbrook, try this one out. Thick motor oil pour with a fairly diminutive cafe au lait colored head. Settles sludgy and potent, with buckets of lacing. Nose is very rich and sweet, with the barrel fairly understated in a way that allows the chile to come through alongside the dark chocolate. I find imperial stouts fairly heavy going these days, and certainly couldn’t finish this in a single session. But I enjoyed and appreciated the complexity and craft in this one. Doesn’t get a lot of run but probably deserves some acclaim.

Pours an opaque black from the bottle with a thin filmy tan cap and moderate lacing. Aroma of chocolate, vanilla, roasted malts, and that nice bba imperial stout scent. Taste follows with a hint of spice in the middle and a nice sweet finish. This is pretty damn awesome, I want some more.

Pours dark black with a thin tan head. The nose is chocolate, licorice, chills, bacon, spices, little bit o Anika and wood. The taste is high sweet, high bitter and a little smokey. The texture is soft at first but gets crispy with time. The body is heavy side of medium with a long finish. ---Rated via Beer Buddy for iPhone

Bottle. Dark ruby pour. Nose is cinnamon, hot churros, light pepper, chocolate and coffee. Flavor is cinnamon, chocolate, smoky, lightly bitter, some fusels. Lightly bitter finish.

Nowhere near enough pepper in this. The chocolate and bourbon combo is interesting but not as tasty as I would have hoped. Certainly not bad but I like the regular Sombrero better.

pours black with a medium mocha head. aroma has dark chocolate...roasty...mild bourbon and very mild pepper. flavor has nice dark chocolate and faint cinnamon...a faint churro note...very mild bourbon and a hint of dark fruit. Mouthfeel is medium and the finish is roasty with bourbon, dark chocolate, and a hint of peat.

Black in color with a khaki head. Nice roasty nose, chocolate, chile, and some whiskey. Some vanilla, hints of graham cracker, mild coffee, and a touch of dark fruit. Nice chocolate, whiskey, and vanilla. Some roasted malt, a hint of coffee, chile, dark fruit, and a touch of booze.
