Our third anniversary beer up-sizes Chocolate Sombrero, using extra ancho chile and adding chipotle pepper. We aged the brew 100% in Wild Turkey and Heaven Hill bourbon barrels. May it leap onto your palate majestically, like a luchador who flies into the ring from atop the highest rope.

Dark brown with a tan head. The aroma and flavor are very nice. I get a lot of chocolate and oak notes as well as some molasses. The whiskey is very evident with some strong bourbon notes as some maple and vanilla. Fairly sweet but still easy to drink. Medium mouthfeel and medium carbonation. Great beer.

bottle. near black with a very small tan head. aroma is strong bourbon with hints of vanilla and coconut. the body hits me a bit light and astringent. it feels like its missing some midrange depth of something. the flavors are that of a nice bourbon aged imperial stout...but i thought there was some peppers in here? the beer mellows as it warms, but theres a lingering fusal flavor. its a decent barrel aged imp stout, but if your looking for a cocoa mole, look elsewhere.

I will echo what a recent rater said of this, that it smells better than it tastes. The aroma is excellent, with a strong bourbon note that I could suck in all day. But in the tasting, I had a really hard time getting the spice (no chipotle spice to speak of) and the bourbon was too strong--too much alcohol dominating. Decent in many respects, including the mouthfeel, but out of balance in the tasting. Bottle.

Bottle. Pours black with medium tan head. Aroma of dark and creamy chocolate, some slight cinnamon, roasted, light bourbon and vanilla. Taste is well incorporated and not overwhelming bourbon, vanilla, light touch of pepper on the back end. Some roasted/smokiness, nice bourbon. I really liked this one. It was up there in price, but before I have the barrel aged Mex Cake I wanted to have a standard to go by and this was fantastic.

Black body with wispy tan head. Big vanilla whiskey, dry wood, dark chocolate aromas with mild peppers. Light to medium body with soft co2. Bitter chocolate, smooth vanilla flavors with big dark roasty malts----smells better than it tastes----good

Pours dark but slightly thin. Nose is a bit hot with dark roast coffee and malt. Bourbon not very present except as heat on nose and finish. Maybe some chili in the back of the throat if you look for it. Ok but expected more. Great Divide Chocolate Yeti blows this out of the water in this class and it isn’t even BBA.

Bomber poured a clear dark reddish brown with a lingering ring of tan foam. Aromas of roasted malt, dark chocolate, chilies and light bourbon. Palate was medium bodied and smooth with a lightly warming finish. Flavors of dark chocolate, cinnamon, chilies, light smoke and light bourbon with a smooth lightly warming lingering chocolate finish.

Great beer here. Pours like an imp stout should. Tastes is really decadent chocolate/ brownies with bourbon and oak notes. Smooth and hugely drinkable. These guys know how to do a barrel aged imp stout.
