Our third anniversary beer us sizes Chocolate Sombrero, using extra ancho chile and adding chipolte pepper. We aged the brew 100% in Wild Turkey and Heaven Hill bourbon barrels. May it leap onto your palate majestically, like a luchador who flies into the ring from atop the highest rope.

On tap at the Bulldog, great deep dark brown/ruby color,nice tan head. Aroma is a bunch of chocolate, nice barrel scent and tobacco. Taste is chocolate, dark fruit, bit of licorice and nice oak. This is complex and I'd love to have it again. ---Rated via Beer Buddy for iPhone

Extremely dark brown, practically black in color with a medium-brown head, this beer has a great chocolate and slight meaty chile meat aroma. Itís not what I expected once in the mouth, with more of a bourbon flavor... actually, it tastes just like fresh bourbon. Chipotle: none, really, other than a faint hint of smoke. Itís full-palated and bodied, lighter-bodied in the finish that eventually leads to a faint pinch of a burn in the center of the throat from the capcasin. Itís good, but it could be much better...

Bottle from Total Wine in Tampa. Pours black with a small tan head, aroma is of spice, light sweetness, bourbon, oak, light boozy alcohol and some chocolate. Taste is tons of chocolate, syrupy sweetness, oak, bourbon, lightly smoky chili pepper, light spicy notes that donít show up until after the finish. Heavy on the palate with a light punch of warming alcohol in the finish. Solid.

650ml bottle. Pour is a dense plack with a tan head that is large, foamy, and sticks around. As it slowly recedes, very nice lacing. Smell is vanilla, oak, cinnamon, cocoa, caramel, and bourbon. There is also a slight bit of pepper. Very much stout and barrel dominant in the smell. The flavor is boozy with plenty of bourbon, some nice light pepper notes, though it isnít spicey, nice fruitiness form the ancho, and a nice smokiness form the cipotle. If only they would have thrown in a few hot ones.

Very dark brown, nearly black, with a small light brown head. Aroma of roast, dark fruit, chili peppers, and chocolate. Taste is full of roast and bourbon with some chocolate and a touch of chili heat. The carbonation is almost flat, and itís pretty thin for an imperial stout.

Pours dark brown with a tan head. Aroma is chocolate, coffee, roasty malts. Flavor is chocolate, caramel, vanilla, coffee and a little spicy.

Samples from a 22 oz bottle at the Secret Stash Bash (Atlanta). A: Pours very dark brown with a large, frothy brown head. The head has great head retention and leaves behind a rather full coat of lacing. S: Sweet and fruity aroma with some bourbon. T: Boozy, as expected, given the high ABV and the bourbon barrel aging, but plenty else going on. Flavor notes include sweet caramel, brown sugar, vanilla, light chili pepper and dark fruit. Leaves a strong and long lasting aftertaste in which the chipotles come to the front, along with coffee, light smoke, and some hops. M: Very smooth with a full body. O: A rich imperial stout with excellent complexity. Lots of aromas and flavors; while some of these are rather pronounced at times, none dominate to the point of masking all of the others. Iím eager to try the bottle put in my cellar for aging.
