Our third anniversary beer up-sizes Chocolate Sombrero, using extra ancho chile and adding chipotle pepper. We aged the brew 100% in Wild Turkey and Heaven Hill bourbon barrels. May it leap onto your palate majestically, like a luchador who flies into the ring from atop the highest rope.

Bottle share at DLD. Sweet oaky bourbon, vanilla, chocolate, and light chili aroma. Deep mahogany with a large tan head. Sweet vanilla, chocolate, bourbon, and spicy oak flavor. Full sticky body, soft carbonation.

22oz bomber pours with a deep dark body supporting a decent enough looking tan head of foam. The aroma offers up earthy coffee, dark roasted malts, mild chocolate and some chili pepper capsaicin notes. The taste is earthy chocolate, dark roasted malts and dark roasted coffee. To midway it picks up modest barrel notes like bourbon and wafer thin ribbons of vanilla and wood. Into the finish modest notes of chili peppers and heat surface amid the other notes and bring this to closure. Kudos on the barrel contact time for me it was spot on and let the beer have some balance.

Bomber pour, black with lacing and legs. A sweet chocolate nose followed by burbon and booze. Robust flavors start out with a balanced mix of chocolates and burbon, followed by peppers and some smokeyness in the background. A long hard solid taste of chile peppers and lots of burn in the finish. This is a really great fun beer with a great balance of flavors and finish. Strange name and label, but I would seek this out anytime.

On tap at the Bulldog, great deep dark brown/ruby color,nice tan head. Aroma is a bunch of chocolate, nice barrel scent and tobacco. Taste is chocolate, dark fruit, bit of licorice and nice oak. This is complex and I'd love to have it again. ---Rated via Beer Buddy for iPhone

Extremely dark brown, practically black in color with a medium-brown head, this beer has a great chocolate and slight meaty chile meat aroma. It’s not what I expected once in the mouth, with more of a bourbon flavor... actually, it tastes just like fresh bourbon. Chipotle: none, really, other than a faint hint of smoke. It’s full-palated and bodied, lighter-bodied in the finish that eventually leads to a faint pinch of a burn in the center of the throat from the capcasin. It’s good, but it could be much better...

Bottle from Total Wine in Tampa. Pours black with a small tan head, aroma is of spice, light sweetness, bourbon, oak, light boozy alcohol and some chocolate. Taste is tons of chocolate, syrupy sweetness, oak, bourbon, lightly smoky chili pepper, light spicy notes that don’t show up until after the finish. Heavy on the palate with a light punch of warming alcohol in the finish. Solid.

650ml bottle. Pour is a dense plack with a tan head that is large, foamy, and sticks around. As it slowly recedes, very nice lacing. Smell is vanilla, oak, cinnamon, cocoa, caramel, and bourbon. There is also a slight bit of pepper. Very much stout and barrel dominant in the smell. The flavor is boozy with plenty of bourbon, some nice light pepper notes, though it isn’t spicey, nice fruitiness form the ancho, and a nice smokiness form the cipotle. If only they would have thrown in a few hot ones.
