Our third anniversary beer up-sizes Chocolate Sombrero, using extra ancho chile and adding chipotle pepper. We aged the brew 100% in Wild Turkey and Heaven Hill bourbon barrels. May it leap onto your palate majestically, like a luchador who flies into the ring from atop the highest rope.

Appearance: Pours dark brown with tan swirls. Looks really thick.

Aroma: Big huge chocolate,vanilla, bourbon, brownie.

Taste: Dark chocolate, wood, bourbon whisky, roast.

Mouthfeel: Full bodied with modest carbonation.

Overall: Simply delicious! I’m a fan of Chocolate Sombrero, and the barrel aged treatment as well as fluffing it up did this beer right. I would be very happy if Clown Shoes brought this back once a year.

Sweet alcohol, dark fruit, chocolate smell, pitch black oil appearance, the oaky barrel taste from being aged is an awesome sensation on the plate after the swallow. Not watery, but almost miky, this is a perfect blend of coffee and chocolate. Going to age another bottle for a year and see if it gets even better.

Nice beer. Very smooth. Aroma was of bourbon and chocolate. The dark black color with tan head was inviting. Good carbonation and full mouthfeel. Bourbon and milk chocolate came out first with some coffee at the back end. I tried to detect the chipotle pepper essence but found it overshadowed by the other flavors. Good sipper and quite potent.

UPDATED: JUL 7, 2013 Bomber bought at Friendly Spot. Pours a deep black with a small tan head. The aroma is peppers, spice, roasted coffee, some chocolate. Very complex aroma. Some sweetness too. Black pour with a cream head. Nose is pepper, vanilla, wood, roasted malts. Smooth palate, heavy roasted malts, bourbon, pepper, great finish.

Bomber. Poured black with a thin tan head. Aroma and flavor were roasted malt, some chocolate and coffee, hints of bourbon, vanilla, and chiles. Surprisingly, the chiles and bourbon were quite subtle -- would actually have liked them boosted a bit. Medium to heavy palate.

22oz bottle from Vince, thanks man. Clear dark brown with a creamy tan head. Aroma of chocolate, cinnamon, spicy pepper, bourbon and vanilla/oak. Flavor is rich chocolate malt, bitter roast, boozy bourbon, oak and some vegetal taste. Full body with a long finish. Intense beer, lots of bitterness, alcohol and a light pepper heat.

22 oz. bottle. Pours deep dark brown and looks black once it is in the glass and shows a little khaki head that dissipates to a tiny collar. Aroma has noticeable bourbon on the nose as well as roasted malt chocolate and vanilla and I get some licorice too. Taste is bitter with bakers chocolate some spice and woody bourbon in the finish as well as vanilla and faint smoke. Palate is slick with a drying bitter finish.
