COMMERCIAL DESCRIPTION
Our third anniversary beer us sizes Chocolate Sombrero, using extra ancho chile and adding chipolte pepper. We aged the brew 100% in Wild Turkey and Heaven Hill bourbon barrels. May it leap onto your palate majestically, like a luchador who flies into the ring from atop the highest rope.

22oz bottle, bottled on 01/08/13. Black pour, brown creamy head. Huge smells of chocolate, hints of chili peppers, loads of vanilla. Huge flavor. Tastes of chocolate, dark chocolate, roast, bourbon, burnt barley, silent chipotle spice. Finishes with a flavor of chilies, loads of chocolate, and a cough syrup bitterness. Whoa, what a huge Clown Shoes! An excellent beer, well worth the wait. (3654)

Dark black pour from a bomber, slight tan head. Spicy chocolate nose - very nice! Rum, sugar, subtle pepper heat that mixes with the alcohol. Really nice!

Bottle and served in my Old Raspy nonik glass: Pours nearly black with a lasting but small frothy beige head and spotty lace. The aroma has notes of chipotle and ancho peppers, bittersweet chocolate and caramel, roast and bready malts with a dash of coffee, vanilla, oak and bourbon, VERY VERY INVITING! Lovely chocolate and roast notes greets the palate followed by mild dark fruit and caramel before the chilies come aboot and play. Dusty dry finish just as it should be. Unlike the muddled and over-hopped Chocolate Sombrano, this beer is much more fully integrated and complex. Mikey Likey!

Big chocolate nose. Taste has alot going on. Chocolate, wood, vanilla, spices. The chili peppers add a great twist but are nice and subtle. Finish is bittersweet. Really nice

Bottle. Heavy malt aromas of toasted, molasses and dark chocolate, moderate resin for the hops, earth for the yeast, with background notes of charcoal, dried peppers and alcohol. Head is average size, frothy, light brown with good lacing and good legs and is mostly diminishing. Color is clear dark brown. Flavor starts heavily sweet and lightly to moderately acidic, then finishes moderately bittersweet and acidic. Palate is medium to full, creamy with a soft carbonation and a heavily alcoholic finish. Its a little harsh on the palate with the alcohol content, so I didn’t like it as much as their other Imperial Stouts. It does go well with fresh out of the oven banana bread.

22 oz bottle. Pours a deep black with very little head. Definite chocolate aroma with some alcohol. Smooth mouthfeel. There is a slight heat from the bourbon but it isn’t overpowering. This will probably be great in a few months.

Chipalsa (1310) - Florida, USA - MAR 10, 2013
22oz bomber from Total Wine. The taste one this one was great - pretty earthy overall. The smell was pretty much peppers, bourbon and oak. Dry cocoa and peppers give off a porter-esque flavor while sweet chocolate and weak bourbon notes balance out the taste. Undertones of oak, spicy peppers and molasses make for a great brew.

22oz bottle. Poured a dark brown color with a small sized off white head. Aromas of light bourbon, wood, some pepper, roast, and chocolate. Tastes of pepper, wood, chocolate, roast, and earthy. Peppers there in the tastes with some heat but not overpowering. Bourbon side very subtle and almost non-existent.

Pours black with a tan head. Aroma of chocolate malt, toasted grain, bourbon, and a touch of spicy heat. Tastes very balanced with chocolate, grain, wood, bourbon, and sweet cereal. Medium to thick mouth feel with a silky touch on the palate. All of this is tied together beautifully with the peppers on the long smooth finish.

Deep brown in color with a slight off-white/tan colored head. Spiced (cinnamon) boozey chocolatey aroma. Sweet roasty chocolatey with defined alcohol warmth and a touch of heat. Quite smooth.
