Our third anniversary beer us sizes Chocolate Sombrero, using extra ancho chile and adding chipolte pepper. We aged the brew 100% in Wild Turkey and Heaven Hill bourbon barrels. May it leap onto your palate majestically, like a luchador who flies into the ring from atop the highest rope.

22oz bottle pours a dark brown color without much head. Slight bourbon aroma. Lots of mild flavors of chocolate and bourbon. Medium sweetness. Chili very subtle. The flavors all come together well. Very enjoyable.

UPDATED: MAY 1, 2014 This beer took me by surprise. A definite hint of bourbon with some chocolate and just the right amount of pepper as to not turn this into some freak show specialty beer. This is at the top of my 2nd tier of stouts. Considering the Bourbon County?s, KBS and Surly Darkness are on the top tier I?d say that says something great about this beer.

Bomber. Blackish brown with a thin light brown head. Intense chocolate aroma with vanilla, milk, and light pepper. Taste is very sweet. Body is heavy with an oily feel. I was hoping for a greater pepper presence, but the bold chocolate flavor was nice.

Pours a dark dark black with a thick chocolate vanilla twist colored head. Smell is very interesting. Chocolate, toasty vanilla, and bourbon. A nice chocolate mouthfeel. A smoky vanilla outlines the other flavors. The peppery spice lays in the back of the mouth. Strong alcohol aftertaste. The flavors of the alcohol are almost rum like with fruit backgrounds. Overall feel seems almost thin for the big style. As it warms the spicy kick really takes over any overpowering alcohol flavors. In the end I would say on the better end for stouts by the brewery.

Chocolate, coffee, and boozy bourbon in the aroma. Taste starts like a nice chocolate stout. Peppery spice, vanilla, bourbon, and some drying alcohol in the finish. I was a little skeptical when I read the description, but the Luchador isn’t as over-the-top-rope as I feared. The unusual ingredients bring some interesting flavors to the ring, but without overpowering a great base beer. Beware the 11% alcohol, though. Talk about a foreign object...

Bomber to snifter (shared with the Mrs.). Looks good; a mostly opaque dark cola with foamy beige head. Smells good too; dark malt, chocolate, bourbon, and smokey pepper. Tastes like it smells, but not as balanced. Solid on the palate; a bit thin though. Good, but smells better than it tastes.

Nose of vanilla, with some booziness, and a herbal hint. Pours a blackish-brown with a short lived tan head and no lacing. The taste is mildly sweet, boozy, peppery, and it’s all nicely wrapped in one wonderful package. Medium-full body and moderate carbonation. Overall, a complex beer that succeeds on all levels. I would drink again.

On tap at the Cove. Pours a dark brown with beige head that leaves sticky lacing. The aroma is strong chocolate, roast, and peppers. Thick mouthfeel with rich chocolate malt, roast, and nice sweet finish. Very good.

This is the real deal... Excellente! Taste, aroma, mouthfeel - all fantastic... Wish I tasted more of the Ancho chilies, but won't let that detract from an otherwise spectacular beer....

Aroma is chocolate booze and cherries. Appearance is a muddy dark brown allowing no light to pass. There was virtually no head other than a light tan trace of foam. Taste is of chocolate some vanilla cherries and booze. Palate is good with minimal carbonation. Overall very good. I wonder how well this will age.
