COMMERCIAL DESCRIPTION
Our third anniversary beer us sizes Chocolate Sombrero, using extra ancho chile and adding chipolte pepper. We aged the brew 100% in Wild Turkey and Heaven Hill bourbon barrels. May it leap onto your palate majestically, like a luchador who flies into the ring from atop the highest rope.

This is the real deal... Excellente! Taste, aroma, mouthfeel - all fantastic... Wish I tasted more of the Ancho chilies, but won't let that detract from an otherwise spectacular beer....

Aroma is chocolate booze and cherries. Appearance is a muddy dark brown allowing no light to pass. There was virtually no head other than a light tan trace of foam. Taste is of chocolate some vanilla cherries and booze. Palate is good with minimal carbonation. Overall very good. I wonder how well this will age.

On tap at Cloverleaf. Pours a dark brown color with a caramel colored head. Aroma of chocolate, roast, pepper spice, and vanilla. Great taste. Perfect blend of the coffee roast, vanilla, and pepper spice. All subtle but noticeable. Nice medium to thick body. Great brew.

Pailhead (4761) - Brownstown, Michigan, USA - APR 4, 2014
Bottle: The aroma consists of moderate-heavy chocolate, molasses, light roasted coffee, lighter smoked peppers, vanilla, and faint bourbon. It pours a dark brown with a slight orange glow around the edges of the glass. It has a one finger light brown head that quickly fades to a thin film outlined by a thin ring. There is some very thin webbing left on the sides of the glass. The flavor starts with moderate-heavy chocolate, molasses, and some roasted malt. The finish light-moderate coffee/espresso, vanilla, faint bourbon, and cinnamon. The bourbon and cinnamon get slightly stronger and I get a touch of pepper heat as it warms, but the pepper would be easy to miss if I wasnít looking for it. Itís medium-full bodied with mild carbonation and a slightly sticky mouthfeel. Overall, the barrel aging flavors are somewhat light. More than anything, it really seems to have really muted the cinnamon and peppers from the regular Chocolate Sombrero.

Bottle. Poured a black color with an average frothy brown head that mostly diminished with good lacing. Moderate to heavy roasted sweet chocolate, roasted peppers and bourbon alcohol aroma. Medium to heavy toasted chocolate malt flavor with a medium to heavy dark spice sweet and small alcohol bite finish of moderate to long duration. Full body with a smooth texture and flat carbonation. This is a complex solid beer.

Bottle - Chocolate, cinnamon and sweet roast malts. Jet black with a thin head. Spicy chocolate and vanilla with a bit of a cloying finish. Nice, but the sweet finish is a bit much for me.

22oz bottle, thanks to voodoofish65usf for sharing! About a 3oz sample. Very dark brown / black color. Thin ring of tan head, couple loose bits of lace. Awesome bourbon barrel, chocolate aroma in the nose. Nice vanilla in the aroma. Mild pepper heat in the finish, but little bite or kick, very well balanced and well blended amount of pepper. Moderate bitter taste, light to moderate sweet. Alcohol really well hidden. Medium to bigger body. Good chewy texture, super smooth, kind of creamy. Light carbonation. Lightly slick finish. Very tasty, enjoyable stuff. I donít think Iíd have much trouble finishing a whole bomber to myself, if I tried. I like it much better than I remember liking Chocolate Sombrero... Much smoother, and less sweet.

Good looking beer is opaque with a thick tan foam. Spicy chocolate is definitely the best way to describe the aroma. Oily mouthfeel. Smooth with a pepper kick. Bourbon is noticeable in the background. Dark fruits finishes it off.

Pours opaque black with tan head and spotty lacing. Aroma of soy sauce , chocolate, pepper, and spice. Taste is caramel/toffee malts, pepper, whiskey, and alcohol burn.
